(CNN) — The downside to waterslides? The effort usually always exceeds the reward, at least where time’s concerned. You climb dozens of steps to reach the slide’s entry point, huffing and puffing your way to the top, only to find yourself floundering about in the exit pool mere seconds later. W Hotel, Hong Kong (Day 2)
Another 6AM wakeup call due to jet lag is such a pain – but I love the gym at the W Hotel. The FIT Gym is located on the 73rd Floor and at 6 AM its extremely quiet. After a quick 45 minute cardio as well as a shower/steam, I was refreshed and ready for BREAKFAST!
Breakfast is served in the KITCHEN and contains a wide variety of cuisine (e.g. Korean, Japanese, Chinese, Western and etc). Kitchen is located on 6th floor just slightly behind the set of elevators and you will have an excellent view of Hong Kong harbor. I love hotel breakfast in Asia due to the wide variety as well as the quality.

After breakfast, wife and I took a couple hours of just relaxing at the hotel and met my friend at Upper House Level 49 Café Gray for brunch. With my education in the UK as well as living in Hong Kong for 13 months, I’m extremely fortunate to have numerous friends from university and work living and residing in Hong Kong.
Café Gray is a contemporary European restaurant with a great view of Hong Kong.
We ordered: Pesto Parpardelle Bolognese Grilled Red Snapper, Rutabaga, Avruga Garganelli with Prawn, Scallop, Clams and Baby Squid
The food wasn’t amazing but the view that you have from the restaurant is unbeatable.
After a quick brunch, we took an uber up to the VIctoria Peak. There are several ways to get Peak and one is taking the Peak Tram but with 3 individuals Uber ended up being cheaper and a lot quicker. After we reached Peak Tower, we took a quick walk around and snapped some photos.

After a quick tour, another uber right down to PMQ. PMQ was formally a Hong Kong Police residential building and now contains local shops and restaurants.
A short walk away from PMQ was my favorite egg tart bakery – Tai Cheong. The egg tarts are to die for – the pastry is buttery and flaky and the inside is warm and creamy!

With all the walking around – we became extremely hungry and decided to hit one restaurant that I ALWAYS end up going to Hong Kong – Under Bridge Spicy Crab in Wan Chai. Their specialty is their spicy crab which can be around $700 HKD or $100 USD (depending on the weight). The crab they serve here is similar to Singaporean Chili Crab. We went little bit overboard and ordered: Large Crab Chinese Crispy Belly Pork Manila Clams Water Spinach Steamed Razor Clam The crab was fried and was covered in garlic, spring onions and chili pepper. The saltiness of the condiments as well as crab was perfect pairing with rice!
The fried garlic and green onion is salty and perfectly pairs with rice and/or a bottle of beer!
The manila clam was extremely fresh and was stir fried with black bean sauce and a bit of pepper.
The water spinach is probably my go-to chinese vegetable dish. The crunchiness of the water spinach adds perfect texture and it was perfectly stir fried with garlic.
The steamed razor clams were extremely fresh and flavorful. They topped it off with chopped garlic, scallion and glass noodles with a bit of cooking wine + soy sauce.
Lastly the Crispy Belly Pork is my go-to Chinese BBQ. It’s the belly of the pork and the skin is perfectly dried and crispy and goes excellent with beer.
All of this cost circa $900 HKD and/or $120 USD. We arrived at the restaurant at 6PM and the restaurant wasn’t at full capacity. We left at 7:30PM and the a huge line started to form outside the restaurant. So please go early!
With our stomach full and happy – we bid our goodbye to our friend and headed back to hotel. All day of walking around Hong Kong (even in March) was a bit exhausting and needed shower/clean up before our night drinks at the Ozone at 12AM!

Though trade is an important part of the booming bilateral relationship, a row over market access and tariffs has escalated in recent months, leading to fears of a protracted dispute.
On Thursday, President Trump said that India’s “very high” tariffs on US goods are “unacceptable” and must be withdrawn.
“I look forward to speaking with Prime Minister (Narendra) Modi about the fact that India, for years having put very high Tariffs against the United States, just recently increased the Tariffs even further. This is unacceptable and the Tariffs must be withdrawn!” Trump said in a tweet on his way to Osaka, to participate in the G20 Summit.
“The talks with @POTUS were wide ranging. We discussed ways to leverage the power of technology, improve defence and security ties as well as issues relating to trade,” Prime Minister Modi tweeted after his meeting with President Trump.
“India stands committed to further deepen economic and cultural relations with USA,” he said.
Briefing reporters on the Modi-Trump meeting, Foreign Secretary Vijay Gokhale said the issue of trade was discussed by the two leaders.
“There was a discussion on trade, both sides aired their concerns, both sides spoke about the interest of the other side and what was agreed was that the trade ministers of both countries would meet at an early date and would try and sort out these issues,” he said.
“The Prime Minister did mention in particular that we had taken some action after the Generalized System of Preferences (GSP) was revoked, that that was now something that already had happened and now we should now look forward and we should see how we can resolve some of these issues,” Gokhale said.
President Trump welcomed this idea, he said, noting that both US Trade Representative Robert Lighthizer and the Treasury Secretary Steven Mnuchin were in the room when the two top leaders met.
“So what we expect now (is) an early meeting and the level is still be decided whether it will be at the level of Commerce & Industry Minister and USTR or we will first have technical discussions, that is an issue to be decided,” the foreign secretary said.
“But essentially it was a very productive discussion, it was very open discussion and we will take things forward,” he added.
The Modi-Trump meeting assumes significance in the wake of the strain that has popped up in the bilateral relationship on a host of trade and economic issues.
On Wednesday, US Secretary of State Mike Pompeo, who was in New Delhi said that “great friends are bound to have disagreements”.
“We’ll keep working to resolve any economic disputes – not only those that we have at this moment, but those that with any significant trading relationship inevitably arise,” Pompeo said.
India has raised tariffs on 28 items, including almond, pulses and walnut, exported from the US in retaliation to America’s withdrawal of preferential access for Indian products.
President Trump terminated India’s designation as a beneficiary developing nation under the key GSP trade programme from June 5 after determining that New Delhi has not assured the US that it will provide “equitable and reasonable access” to its markets.
The Generalized System of Preference (GSP) is the largest and oldest US trade preference programme and is designed to promote economic development by allowing duty-free entry for thousands of products from designated beneficiary countries.
The Trump administration wants India to lower the trade barriers and embrace “fair and reciprocal” trade.
Trump has also criticised India’s high import tariff on the iconic Harley Davidson motorcycles as “unacceptable”.
Last February, India slashed the customs duty on imported motorcycles like Harley-Davidson to 50 per cent after Trump called it “unfair” and threatened to increase the tariff on import of Indian bikes to the US.
The government on June 21 last year decided to impose these duties in retaliation to the US decision of significantly hiking customs duties on certain steel and aluminium products. America, in March last year, imposed 25 per cent tariff on steel and a 10 per cent import duty on aluminium products.
Many US companies like Google, Mastercard, Visa and Amazon have raised concerns over the issue of data localisation and its impact on their operational cost.
In April last year, the Reserve Bank of India had issued a directive on ‘Storage of Payment System Data’. It had advised all system providers to ensure that within a period of six months, the entire data relating to payment systems operated by them is stored in a system only in India, for effective monitoring.
India has also dragged the US to the World Trade Organisation’s dispute settlement mechanism over the imposition of import duties on steel and aluminium.
India’s exports to the US in 2017-18 stood at USD 47.9 billion, while imports were at USD 26.7 billion. The trade balance is in favour of India. PTI

Hospi Buz : How it feels to be the young chef of the year (2018) that too in the millennial era when the country’s maximum population is young.
Altamsh Patel:- Makes me feel proud and same time motivates me to keep working hard and be the example for my juniors of the culinary world.
Hospi Buz : After having such a vast experience in Airline catering, what motivated you to take a shift to the Hotel?
Altamsh Patel:- I almost spent 8years in-flight catering industry and being a management trainee I got to learn everything from basics about the flight catering operations, I was lucky enough that I had worked in one of the biggest kitchens of Asia, But as a chef, I also wanted to gain experience of interacting with guest & creating experiences which was a little difficult in-flight catering as we don’t use to deal with the direct consumer. But trust me working with flight Catering is really a wonderful experience.
Hospi Buz : What are the major differences in planning the flight menus and planning the menus of hotels?
Altamsh Patel:- Food is suppose to be cooked with love no matter what and where you cook. Chef life in both the kitchen remains same, no doubt scope for food presentation is maximum in hotels and in-flight catering certain limitations are there, regarding presentation as the food is served finally by the crew. Also, we cook food in-flight kitchen for the passengers’ whose main intention is to travel not to have food whereas in hotel guest especially comes to your restaurant for some extraordinary food & Service experiences.
Hospi Buz : You are a core committee member of many culinary and chefs associations. How these associations exactly help or uplift the young chefs of the industry?
Altamsh Patel:- I believe wherever you are and whatever you do we should always do something for our fraternity to which we belong. Being associated with all the chefs association helps me to share my knowledge and also to learn from the young chefs. It also helps me to keep myself updated about the culinary industry and latest trends of market.
Hospi Buz : What makes the menu of the Park, Mumbai, unique in itself?
Altamsh Patel:- Our menu is not a regular menu we are doing modern Pan-Asian cuisine & anglo Indian where we had done a lot of fusions and also we try to source organic ingredients which are in demand at present. For us, taste and presentation both are equally important.
Hospi Buz : Being an executive chef, what are the main difference in selecting the menu for in house restaurants and the menu for room delivery services?
Altamsh Patel:- Normally In-Room Dining menu consists of best dishes of various cuisine and restaurant menu is particular cuisine based.
Hospi Buz : After witnessing the various parameters of the present industry and the taste of the people, which cuisine has the highest scope in the present Indian market?
Altamsh Patel:- Japanese & Indian have the highest scope in the market and I hold them close to my heart and they have largely shaped my career philosophy, There has also been a recent spurt in interest in Peruvian and Nordic cuisines but so far this interest has been largely in the west. But given the fact that Indians in large numbers are now traveling all over the globe and embracing global cuisines, we expect this trend to touch Indian shores sooner than later. However, no cuisine, which embraces classical regional Indian and modern Indian fusion food.
Hospi Buz : How the role of the chef is evolving with the changing food habits of the people.
Altamsh Patel:- The primary challenge that chefs face is of burnout as they pitch their passion and talent against the realities of business. Only a few make it and it takes a lot of support from team and business operator to translate this zeal into culinary and business excellence. I have seen the best of chefs burn out as they could not plan their culinary vision in accordance with the organization’s requirements. Chefs are now playing with flavors, textures, tastes, and presentations like never before. They are also a good salesman, they know the market trends and they are very competitive, which is healthy. It gives them food for thought to innovate. The challenges that I foresee for chefs are adaptability to changing trends and guest needs.
Hospi Buz : As a guest which hotel property always remain on the top of your list and why?
Altamsh Patel:- Taj Dubai, I love staying there as it is located in the heart of Dubai, and Dubai is also one of my favorite holiday destinations.

The Plettenberg – Eastern jewel in the Liz McGrath Collection… The Plettenberg – Grande Dame of Plettenberg Bay Some 40 years ago, Madeleine and I went on a trip down the Garden Route or is it up the Garden Route. It’s East, so perhaps sideways? We spent a couple of nights at the old Look Out Hotel in Plettenberg Bay. There was a restaurant on the beach called The Why Not, where we had more than our fill of the Belgian owner’s fabulous food. It is a memory we will hold dear. The incomparable, the late Liz McGrath, no one like her in this country Plettenberg Bay is the ultimate holiday resort. Capetonians love “Plett”, especially in the June school holidays as the weather is mild with lovely warm sunshiny days. The late Gerald and Liz McGrath loved their time in Plettenberg Bay and bought the hotel with a resolution to one recondition the building. Later Mrs McGrath bought a small shopping centre in which she opened an art gallery. In 1996 The Plettenberg was transformed from the virtually derelict but superbly situated one-star Lookout Hotel, to what it is today, a place where the rich and famous could enjoy one of the most dramatic and beautiful views in the world. Vacation in Barcelona

Our trip was booked through Costco. My wife and I spent three nights in this hotel. One of the biggest advantages was the close proximity to the beach which is only 10 to 15 minutes away. There are many restaurants offering different cuisines within 10 minutes. Those who like Indian food could look up Swad or the Sitar. The breakfast choices were plentiful and service was excellent. The complimentary evening reception was enjoyable at the sky lounge-again the service was outstanding. Our room was spacious and comfortable.
