Why are food aggregators leveraging the delivery-only model? – The Economic Times

Biryani By Kilo Why are food aggregators leveraging the delivery-only model? Cloud kitchens can take customers’ orders and deliver them for food brands. It is especially helpful for small and budding restaurateurs. Rahul Sachitanand | ET Bureau | May 05, 2019, 10:24 IST Newsletter A A It is 1 pm on a Wednesday and Marathahalli, smack in the middle of Bengaluru’s tech corridor, is abuzz with activity. A building in the locality hums with the energy of an establishment at peak hour. Inside, orders are being yelled out, cooks are in a blur of motion and the support staff hastily pack a seemingly endless stream of orders. Outside, an army of motorcycle-borne delivery executives waits to get their orders and delivery addresses before rushing off with food packets to hungry customers.Lunch hour is hectic in all hotel kitchens, especially if situated in an office district. But what makes the activity feverish at this particular building is that it hosts a 300 sq ft facility that serves as a kitchen for four brands that sell hundreds of meals daily. This small bustling outlet is what the food and beverage (F&B) industry calls a cloud kitchen, or a delivery-only restaurant . The concept essentially involves eateries, mostly smaller ones, sharing a kitchen facility from where deliveries can be made easily. It helps brands by being closer to customers and by bringing down the cost of setting up a cooking facility. Cloud kitchens can also take customers’ orders and deliver them for food brands. It is especially helpful for small and budding restaurateurs. The F&B industry sees a bright future in cloud kitchens. The facility in Marathahalli is owned and operated by Swiggy . The food aggregator , which helps customers get food at their doorsteps from a wide range of restaurants, started the unit two years ago as a pilot project. Today, the Marathahalli facility is part of a 250-unit cloud kitchen arm called Swiggy Access, which has a presence in eight cities. Swiggy acts as something of an infrastructure provider, giving local F&B businesses a cheaper option to serve customers. Currently, some 70 restaurants — ranging from storied south Indian quick-service brand Vasudev Adigas to Paradise Biryani, Krispy Kreme and Truffles — have signed up for the service.Apart from providing this service to others, Swiggy’s cloud kitchen also services its two private labels, The Bowl Company and Homely — another affirmation the company and the F&B industry sees this model as the future of the business. Swiggy expects to have 400 cloud kitchens by June this year. Zomato , Faasos , Biryani By Kilo and Fresh-Menu are some of the others that see potential in cloud kitchens. Online hospitality platform Oyo and retail giant Future Group are also looking for a slice of this pie.Two reasons have been primarily responsible for the rise of cloud kitchens: the pain of setting up and operating a restaurant and the arrival of technology that has led to an explosion in home deliveries. An aspiring restaurateur will have to worry about high rentals, cuisine changes, décor and a lot of such issues. According to industry estimates, rentals alone account for 15-20% of monthly cost, while other overheads such as employee costs could shave off another 10-20% off the top line. Then there is the question of being crowded out by competitors with deep pockets. All these have contributed to a spurt in cloud kitchens. “There has been a 15-20% reduction in customers walking into restaurants as food and entertainment are available at customers’ fingertips now,” says Riyaaz Amlani, CEO and MD, Impresario Entertainment and Hospitality, the operator of popular restaurants such as Smoke House Deli and Social. “The advent of cloud kitchens has only accentuated this cannibalisation.”Cloud kitchens can help an entrepreneur deal with legacy concerns, says Vishal Jindal, cofounder of Biryani by Kilo. The model, he contends, can help small ventures like his reach consumers more economically. Amlani of Impresario says although cloud kitchens have a small average order size (Rs 120-150 against Rs 500 for a mid-range restaurant), a distinct business model and unit economics tilt the scales in their favour. Depending on the company, these outlets can be 300-1,200 sq ft and serve a radius of 3-10 km. Since these units don’t need to cater to diners on site, they can be set up in cheaper locations.Jindal says Biryani by Kilo has 20 operational cloud kitchens in four cities that bring in annual revenue of around Rs 100 crore. In the next three or four years, this should increase to 100 kitchens across 12 locations. Revenue is expected to be in the range of Rs 500 crore. Biryani and other dishes are cooked at each outlet. About 70% of the orders are delivered by in-house staff and the rest by third-party suppliers such as Swiggy and Zomato. “Lower cost also allows us to experiment with locations and tweak menus and recipes, or even shift locations based on direct consumer feedback,” he says. “We can go live in as little as a month.”It isn’t just nimble upstarts that are looking to cash in on this opportunity. Around 18 months ago, Vishal Bhatia, who was the global brand director at the headquarters of Reckitt Benckiser in London, joined Swiggy as the CEO of its new supply arm. The food aggregator was growing rapidly. In the past 12 to 18 months, it had more than quadrupled its operational strength. It today has 1,70,000 delivery partners, 85,000 restaurants on its platform and delivers in 140 locations. Back then, Bhatia started planting the seeds to grow the cloud kitchen offering. The gambit has paid off. “We are closely following consumer sentiment with our cloud kitchen business,” he says. “More people are eating out and we are helping popular brands such as Truffles in Bengaluru or Paradise in Hyderabad reach out to their consumers more easily and in a cost-efficient way.”The food aggregator also hopes its private labels will ride high in the new business environment. Homely delivers cheap home-cooked food and Bowl Company focuses on single-serve meals (ranging from aglio olio spaghetti to paneer butter masala). Swiggy’s arch-rival Zomato first ran a cloud kitchen in Delhi for a year. In 2018, it decided to widen its play and invested $15 million in cloud kitchen company Loyal Hospitality. Zomato plans to increase its city coverage from 200 to 500 by the end of October 2019.The cloud kitchen business has also come as a shot in the arm for Faasos. The venture founded in 2011 focussed on trying to build a conventional food brand. But cofounder Jaydeep Barman says the economics of trying to build a conventional quick service restaurant does not make sense in a crowded space. In 2015, Rebel Foods, the parent company of Faasos, graduated from being a quick service restaurant to a multibrand cloud kitchen. This has also helped the company widen its offering to biryanis, pizzas and desserts. The business potential also made ride-sharing unicorn Ola drive into this space. In 2017, it purchased Foodpanda India from Germany-based Delivery Hero in a deal estimated to be Rs 200 crore. In 2018, Foodpanda acquired Mumbai-based cloud kitchen venture Holachef for an undisclosed amount. Ola had then made a commitment to invest $200 million in the business, but The Economic Times reported in January that the firm wanted to reduce the cash burn on the business as it had sought to prioritise investments in its ridesharing offering. However, Ola said it remained committed to its stated goal of building the country’s largest cloud kitchen network. The cab aggregator has opened 20 cloud kitchens as part of a broader push into the food space.Ola had also set its sights on FreshMenu, another Mumbai-based cloud kitchen operator, according to investment bankers. But CEO and founder of FreshMenu Rashmi Daga says the firm, which processes over five million orders monthly, isn’t up for sale. After struggling for a couple of years, cloud kitchen operators are now in a position to build a firm foundation, says Daga, whose venture has some 40 units, each catering to diners in an 8 km radius, in two cities. “We are building an independent brand and plan to have 100 kitchens in five years. The cloud kitchen business will transform India’s F&B market.” Ola declined to answer specific questions for this story. A spokesperson replied via email: “As the largest hotel chain in India, operating franchised and lease assets, we do have an active play in the F&B business with an average of about 25% of our revenue coming through the kitchens we operate in some of our hotels.”However, business and regulatory concerns may come in the way of digesting the rapid expansion and bullish outlook in this sector. For one, food delivery companies need to balance fuelling cash-guzzling core businesses with investments in newer opportunities around cloud kitchens. Changing norms around foreign direct investments may also slow growth, as new norms bar online food companies from holding a stake in companies that sell on their platforms.Amlani of Impresario says conventional restaurateurs understand consumers and food better. But it may be difficult for them to convert an established outlet into a cloud kitchen or to make an addition to accommodate this innovation, he adds. As profits become a priority, funding could be tricky, says Rehan Yar Khan, an early stage investor and cofounder of Orios Venture Partners. “Larger ventures have some cushion, but standalone operators may have to work doubly hard to raise funds.”Jindal of Biryani By Kilo says otherwise. He says his cloud kitchen venture will soon be among the largest standalone F&B businesses in the country and is close to getting $8 million in series-A funding. Faasos, too, is close to raising up to $100 million in its latest round of funding. This will value the eight-year-old company at over $450 million. “There is a lot of headroom for growth in what is effectively a four-year-old industry,” CEO Barman adds. RELATED

Classifieds Nancy Sweeney brings “glamping” to Bar Harbor with the opening of Eden Woods Glampground. Glamping is what you get “if you take camping and glamorize it a little bit,” Sweeney said. One of the four fully-furnished tents is wheelchair accessible. ISLANDER PHOTO BY BECKY PRITCHARD May 4, 2019 by Becky Pritchard on News BAR HARBOR — A new restaurant with plenty of spice and a shop featuring recycled bags are moving into downtown Bar Harbor this spring. In addition, a favorite old sports pub is getting a makeover under new ownership, a new “glampground” is open and one of the town’s oldest companies is expanding its holdings. Royal Indian restaurant will open its doors at 39 Rodick Street in early May at the former Morning Glory Bakery location. A new deck for outside seating will expand the dining area in the summer months. Owner Diwas Thapa said the year-round restaurant will serve “fresh and authentic Indian food” seven days a week in the summer, and five days a week in the winter. Thapa is originally from Nepal and grew up with home-cooked Nepalese-style Indian food. He has worked in restaurants since coming to the U.S. His family owns Indian restaurants in Canada. Indian food is known for “lots of flavor and spices,” Thapa said. As is standard for Indian cuisine, the restaurant will offer many choices for vegetarians and vegans. Menu items will also include chicken, lamb, and seafood dishes. Gluten-free choices will be offered as well. Over on Firefly Lane near the Village Green, Portland-based business Sea Bags will open a seasonal gift shop on May 10. The company designs, creates and sells tote bags using recycled sails. Sea Bags was founded in 1999, and over the years has expanded to open gift shops in coastal towns up and down the East Coast. Paul Gori, the company’s vice president of retail stores, said Sea Bags had been looking for retail space to open a Bar Harbor shop for years. “When you think of Maine, you think of Bar Harbor,” Gori said. As a coastal community with a sailing history and a robust tourist season, he said, Bar Harbor “fits the criteria for a Sea Bags store.” Bags sold in the store are made in Portland with recycled sails, New England rope, and thread from “one of the last remaining thread manufacturers in the U.S.,” according to the company’s website. Gori said that since its inception, Sea Bags has saved over 700 tons of sail material from ending up in landfills. Sea Bags welcomes the donation of old sails to give them a second life, and offers donors a bag made from the sail in return. Little A’s Sports Bar & Pizzeria on Cottage Street is undergoing a makeover and menu change under new ownership, and getting a new name. As of May 1, the remodeled restaurant is now called Tailgate Sports & Pizza. New owner Greg Duperey, who also owns The Stadium pub on Main Street, said popular features will stay the same. Like Little A’s, Tailgate will be open year-round. Pizza will still be on the menu, and delivery will continue. Open Mic and Karaoke nights at the bar will continue. The new menu includes a variety of sandwiches, appetizers, and chicken wings. Tailgate will be adding televisions and an extra pool table. The restaurant has been cleaned and repainted, and a “new draft beer system with new beer lines” has been added. “Everything is brand new,” Duperey said. Tucked away off Route 3 down quiet Seabury Drive, Woods of Eden Glampgound is set to open May 17. Glamping, explained owner Nancy Sweeney, is what you get “if you take camping and glamorize it a little bit. “It’s very big in Europe,” Sweeney said, “starting probably a decade ago. It comes in all shapes and sizes.” Woods of Eden features large canvas and wood tents on platforms. Tents are far enough from each other that guests have privacy, Sweeney said, but close enough that “you’re not in the woods all by yourself.” The European-made tents are built for comfort: the canvas is dual-layered to keep the tents from getting hot in the sun. Campers sleep on beds instead of camp mats; linens are provided. Tents have indoor and outdoor cooking facilities, as well as full bathrooms with hot and cold running water. One tent has a ramp and other wheelchair-accessible features. “I wanted to create a really tranquil place where people could get away without technology,” Sweeney said, mentioning that though the tents are equipped with wi-fi, there is no TV. On May 4, Acadia Corp. plans to open Island Trading Company at 105 Main Street, the former location of West End Drug Store. Dave Woodside, Acadia Corp.’s president, said he was approached by Mike and Stacey Gilfillian last summer when they began making plans to retire and close West End. “While we were sorry to see West End close, we were pleased to negotiate a long-term lease with Mike and Stacey that will provide them a market rate retirement income,” said Woodside, “while affording us the opportunity to renovate the space into an attractive retail shop in the center of downtown Bar Harbor.” The new shop will offer a mix of apparel, footwear, and gifts with a focus on women’s sportswear, jewelry and accessories. The shop will be open seven days a week from May through mid-November. Acadia Corp. traces its history on MDI to 1932 when it was formed by a group of local business and professional people to provide services on the summit of Cadillac Mountain. For 80 years, the company operated concessions at Cadillac, Jordan Pond and Thunder Hole until the National Park Service awarded that contract to another company. Since then, Acadia Corporation has expanded its retail presence, adding shops in Bar Harbor and Southwest Harbor. It also operates the Asticou Hotel in Northeast Harbor.

THIS IS NOT GOING TO END WELL! I CAN’T GO ON LIVING LIKE A HUNTED ANIMAL! This case, was actually, the case, that, led to the first anti-stalking laws in the state of California! A horrifying tale. I can’t remember what the chick’s name is, but we will just call her, Jane for ease. John is the real name of her stalker, or what he was called in the 20/20 Special. Jane was a popular, high school cheerleader, dating one of the football players, named, Todd. John, was a smaller dude, who ran track on the track team with Jane, and they barely knew each other. One day, after practice, she complimented him on his finish, at the head of the pack, right there with her. One other time, she ran into him in the halls at school, and knocked the books out of his hands. Jane was a kind gal and helped him pick up his books and nicely apologized. Then the last thing, she could recall, was, being so glad to be graduating and running down to hug her mother and father, and big brothers! John, was on the stand with her, but, she didn’t acknowledge him, because, she really didn’t know him, at all! Two years after, Jane graduated from high school and was home for Thanksgiving break, all the sudden John started to call her. She was like, do I know you? He reminded her that she just walked away on graduation day, and never said anything to him. She was shocked, that, he wasn’t as excited as she was, and she told him to not take it personally, she was just excited to get on with the next phase of her life, college. John, however was not as fortunate and he stayed in the town they grew up in and worked auto body repair, and shortly before he started to call her again, he got fired from his job. Did that exacerbate the reconnect, to someone who was moving onward and upward, leaving him behind again? She didn’t think much about it at the time. Before she left, she got some heavy breathing phone calls, but never connected them to him again. Then, one night before she left, John came over to her house, and because she wasn’t home, he sneaked up into her room with, her father, standing right in the front room! He got in her room and started to look through her stuff. I don’t know if she knew that at the time. FREAKED OUT AT COLLEGE WHEN JOHN SHOWED UP IN VIOLATION OF A RESTRAINT ORDER AGAINST HIM. THE COPS FOUND THAT HE HAD ROPE, A GUN, AMMO, AND SOME THINGS THAT LOOKED LIKE HE WAS GOING TO KIDNAP HER, POSSIBLY RAPE AND BOUND HER? I believe that, Jane, was about, 4 years out of high school at this point, no longer worried about John, has a hot job, modeling and promoting shoes, in a fun, vibrant job, connected to her degree and life could not be cooler. All the sudden, she sees, John again He didn’t seem to care about the restraining order, and sometimes I found with these orders, and someone who is obsessed, they only make things worse! As a result of seeing him hanging out again, she gives up everything and moves back closer to home! Her father was a big sports nut and both parents didn’t know what to think, about her moving back, and giving up her job, but, they tried to sympathize with her and protect her as best they could. He father knew that there were a ton of guys who were attracted to his beautiful daughter, so, what was so different with this guy, from all the others, she had had all her life? Eventually Jane met, an NFL football player, who was playing with the Patriots at the time, they became friends, and, eventually moved in together, more for her protection, and eventually, they got married! They had only been married a short time, and, her husband, had to go to Florida, to try out for the Miami Dolphins. John shows up right in, her home with a pro ball player! This dude was small, and kind of a mousy dude, so the obsession, gave him some power over her, that, he didn’t even fear her big and rich husband! John pulls a knife, and to Jane’s shock, she realizes that he has a fantasy of taking her to the mountains, where he said he just wanted to talk to her! She tries to talk him down, but he is having none of it and she decides to go along with, him. She was sure he was going to take her to the mountains to kill her! He told her to put the rope around her wrists, and then they were going to get in her car, and go for a ride. She was terrified. She keeps telling him, he doesn’t have to do this, and tries to get him to come into reality and realize that she is married now and has moved on and there is no chance for the two of them to get together. LUCKILY HER MOTHER CALLS, AS SHE DID DAILY TO CHECK ON HER DAUGHTER, OR AT LEAST SEVERAL TIMES A WEEK. MOM CAN HEAR THE FEAR IN HER DAUGHTER’S VOICE, AND TELLS HER TO GET JOHN OUT OF THE HOUSE AND ONTO THE FRONT YARD AND THE COPS ARE ON THEIR WAY. Her a John walk out onto the front yard and to her horror, there is no cop, no parent and she is totally alone with the guy! He has a gun pointed at her head and tells her to get in the car. Right then, a cop, pops up with a rifle on the guy, than another one, and eventually her parents, show up! John, then turns the gun onto himself, and she begs him not to kill himself. He keeps saying this is not the way it was suppose to end. Why didn’t she talk to him at graduation, still stuck on that, but, at that point, with two cops guns on him, and her begging him, to stop, her father, motions over to his daughter, to run to him, and he is waiting with open arms! Eventually, John puts the gun down, and is handcuffed. There are no stalking laws at that time, so he is charged with violation of his restraining order, that is not worth much more than the paper it is written on! Only the law abiding follow those orders and the law. The obsessed, use it a fuel for the fire! John was also charge with, kidnapping and weapons charges, and went to prison or was ordered and sentenced to 8 years and served, only 4 of them. Jane has gone on to join forces with anti-stalking groups and legislation, knowing, the full terror of having some you don’t really even know, get so obsessed that for 11 years of his and your life he is following you, and trying to get with you or kill you! Now all 50 states have anti-stalking laws. I remember that case, back in the days I was at the Utah Attorney Generals Office! In law school, I had my own stalkers and, much like Jane, used that experience to write a very different, domestic violence and sexual assault manual for prosecutors and cops! The knowledge of how he reacted to me when I tried to push him away, and how much better and more relaxed he was, when, hard as it was, I just let him hang around me. I found him, asleep in my closets, while all my roommates were gone, and no way I could push him out, and when I tried, he came in crying, and pushing his way back in . . . eventually, I just relaxed and did the best I could. Much, like Jane, I felt that I could handle the situation myself, and did. I started to figure out his mentality and used it to help victims of domestic violence and sexual assault nationwide, changing the expectations, realizing that a woman is most at risk when, she is trying to get away or leave an obsessed husband, boyfriend, or lover, or stranger! A TOUGH LINE THE VICTIM OF AN OBSESSED RELATIONSHIP HAS TO WALK . . . IT IS NOT COMFORTABLE, NOT COOL, SCARY AS SHIT, BUT YOU CAN SURVIVE AND, HOPE OR WAIT THAT AUTHORITIES, FINALLY GET IT! WHEN JANE’S PARENTS AND THE COPS, FINALLY SEE, WHAT JOHN HAD PLANNED FOR HER, WHEN HE WAS ARRESTED, THEY GOT IT, FOR THE FIRST TIME IN 11 YEARS! I AM GOING ON 20 YEARS, RIGHT NOW! “YOU WOULD NEVER HAVE LOOKED TWICE AT ME IN HIGH SCHOOL!” HOW WELL DID YOU KNOW THIS GUY WHEN YOU MARRIED HIM? SO, THIS IS YOUR NEW HUSBAND . . . WHAT AM I MISSING HERE? WHAT IF THE DUDE LIKE JOHN, DIDN’T STAY WEIRD, AND SMALL, BUT GREW HANDSOME AND CHARMING, BUT WITH THE SAME RESENTMENTS? WHAT IF HE WAS PART OF THE BOUNTIFUL HIGH PARKING LOT GANG, WHO YOU NEVER KNEW, NOR HAD ANY REASON TO KNOW, BUT SISTER AND FORMER BEST FRIEND, WERE FRIENDS WITH HIM? SO, SOMEONE LIKE JOHN WHO HAD FANTASIES THAT INVOLVED YOU, AND YOU DIDN’T EVEN REMEMBER MEETING HIM IN HIGH SCHOOL, BUT HE COMES BACK AND YOU MARRY HIM, BECAUSE, YOU ARE SUPPOSE TO DIE, BUT THE GAME HAS BEEN MANIPULATED AND CHANGED, TO GIVE THEM THE ADVANTAGE AND YOU THE DISADVANTAGE YOU NEVER WOULD HAVE HAD, IN HIGH SCHOOL, COLLEGE, LAW SCHOOL, AND AFTER, UNTIL THEY TOOK CONTROL, AND FUCKED YOU OVER TO GET THEIR REVENGE, FROM AN UNSUSPECTING PERSON WHO NEVER KNEW ANY OF THIS EVEN EXISTED! MR. OBSESSED NOW HAS COMPLETE CONTROL OVER HIS VICTIM’S LIFE, WANTS IT ALL, IN REVENGE FOR ALLEGED WRONGS THAT YOU NEVER EVEN KNEW EXISTED, IF THEY DID! WILLING JEALOUS FRIEND AND SISTERS, MORE THAN, GAME TO PLAY “YOU” AND STEAL ALL “YOU” AND “ALL YOUR PERFECTS!” LET’S SAY HE CHARMED, COPS, PROSECUTORS, JUDGES, AND HAD ALL YOUR MONEY OR GAVE IT TO THE WOMEN, WHO WERE HIS FRIENDS FROM HIGH SCHOOL? 25 EVENTFUL YEARS OF ALL THAT THE WORLD VALUES, IS GIVEN TO HIS LOYAL HAREM OF GALS, HIS CULT FOLLOWERS! WHAT WOULD YOU DO?

Lip-smacking Lucknow

Puneetinder Kaur Sidhu
Lucknow is unquestionably the food capital of Uttar Pradesh. Feted for its syncretism and genteel character, the city’s culinary culture has borrowed equally from the diverse mix of people that have long called this region home. While Muslims famously gave Lucknow its kebabs, qaliyas and qormas, the Yadavs, descendants of Krishna, are credited with introducing rich sweets. Chaat is a bequest of the Baniya or trading community, and it was the Kayasthas who taught how to roast and smoke its food. This eclectic ethos is what accounts for the mouthwatering persona that Lucknow, the erstwhile seat of the Nawabs of Awadh, embodies today. From wholesome breakfasts and lavish meals to street side snacks and delicious desserts, it is a veritable smorgasbord of tasty experiences.
A mélange of Indian, Persian and Mughlai food customs, Awadhi cuisine was elevated to an art form by refining further the best of these indigenous and foreign influences. The dum pukht style of sealed and simmered cooking over low flame is an artistry stemming from this cultural infusion. Galawat, the melt-in-mouth tenderising method, shaped the legendary galauti kebab, believed to have been prepared for a nawab with less than firm gums. Another bequeath is the kairi- or raw mango-enriched shaami kebab, a mince meat patty that Awadhi cuisine can claim entirely as its own. This happy union of meat and vegetables is replicated in the summery tali arvi ka salan (mutton and colocasia), and in the winter-special shab deg — turnip and meatballs stewed in aromatic Kashmiri spices.
Airy and poetically addressed pulaos — gulzar, nur, chameli — and chulaos (fried rice) incorporated vegetables and legumes, and the kathal kebab rivalled the shaami in both taste and texture. Awadh was, and Lucknow continues to be, renowned for leavened and unleavened breads cooked in underground clay ovens or griddles. They include ghee-doused paranthas, translucent roomalis, sweet saffron-flavoured shirmals and the grill-cooked multi-layered bakharkhani. Doing Lucknow proud also is its rich array of sweets: kheer, phirni, balai ke tukde (browned squares of sweetened cream) and several types of halwas. Of these, the crumbly jauzi halwa, made from dew-germinated wheat and milk, is edible heaven. The affluent of yore vied with each other to conjure up and create complex dishes. As a result, rakabdars (chefs) were in much demand, greatly prized and came highly priced. One of whom was famed for shaping pistachios into lentils and almonds into rice to prepare an obviously nutty khichdi! Legends abound about entire meals, including tableware, being fashioned from sugar to outdo another’s craftsmanship. Following the banishing of the last nawab, Wajid Ali Shah, to Kolkata in 1856, many of these culinary magicians, having lost royal patronage, found work in the homes of the wealthy. Some of them set up shop in the city’s old bazaars and are still flocked to for their delicacies.
Yet others continued in the employ of appreciative patrons like the Mahmudabad family. Their palace is housed in a sprawling estate in Sitapur, an hour and a half’s drive from Lucknow. Thanks to a battery of long-in-the-know bawarchis (cooks) and rakabdars, they offer bespoke dining experiences handed down over generations. The elaborate recipes are family heirlooms and represent several centuries of culinary history. Should it interest you, a week’s notice is all it takes to tuck into their celebrated tale alu ka salan, murg massallam, kathal pulao and shahi tukda.

New Orleans in a Day

“It’s only sixty dollars,” I pleaded.
“Fine,” he said. “Let’s do it.”
A few days earlier I’d stumbled onto a $60 one-day, roundtrip fare to New Orleans on Frontier and we debated back and forth about it, but by the time we decided to book the fare was gone.
But it popped back up again for the same price on a different weekend. This time, there was little in the way of discussion – we just went ahead and booked it on his Chase card to make sure we were protected should anything happen that would cause us to cancel our trip .
The perk of planning a day trip? Limited time in a city makes it easy to choose the things you really want to do and places you really want to go, while eliminating some of the logistics-planning headache. But if you’re too short on time to figure out what you’re going to on your day trip to New Orleans, here’s what we recommend (and as a bonus – here’s a breakdown of what we spent ): Where to Eat and Drink in New Orleans Cafe du Monde
It doesn’t matter what time you arrive in New Orleans, Cafe du Monde will be ready to greet you. The famous coffee-and-beignets stop is open 24 hours a day, every day except Christmas. We arrived a little before 8 a.m., and could tell that the staff were wrapping up the evening shift. Service is quick and the beignets are hot! The cafe au lait with chicory takes some getting used to, but judging by the sheer number of cans available for sale, it’s very popular. Spitfire Coffee
Spitfire Coffee is a place of refuge in the heart of the busy French Quarter. Duck into this closet-sized coffee shop for a perfectly-executed cortado or pour over made with beans carefully selected from some of our favorite roasters in the country. It was nice to travel to places we’ve visited before via coffee beans – like Panther in Miami and Oddly Correct in Kansas City . Brennan’s
Truthfully, we only stopped in at Brennan’s because we had time to kill in the morning before the city fully wakened and places began to open. We took our Bloody Mary and Milk Punch from the cramped bar outside to watch the turtles on the patio. Were we not about to stuff our faces with crawfish at Crawfest, we would have preferred to dine in and enjoy Bananas Foster in its birthplace. It’s a bit gimmicky, sure, but I was heavily tempted to join the family we saw who ordered while we were there at 9 a.m. Yes, the dessert menu is available all day. Crawfest at Tulane University
I sincerely hope your visit to New Orleans coincides with Crawfest at Tulane University as ours did (and if not, I hope you still get the chance to visit in the springtime to try out this local specialty). The event features all-you-can-eat crawfish and unlimited soft drinks for $15, and I’ve never seen anything like it. With help from a group of students we learned how to tear open the freshwater crustaceans and eat the small pocket of meat inside ( and not the “vein” – here’s a video tutorial in case you don’t have a kindly group of co-eds to help you out). A word to the wise: have your towelettes ready! After eating all we could handle, we joined the crowd to listen to the two bands playing at either side of the field. It would be easy to stay and hang out for the whole event if you had the time. Neyow’s Creole Cafe
Recommendations for Neyow’s Creole Cafe came at us right and left in the days leading up to our trip. In fact, our Lyft driver actually screamed and stated that we were heading to her favorite restaurant as she drove us there. Even though it was early in the evening, the place was packed with diners. Had we arrived at a more standard dinner time we would have encountered a line, so don’t be surprised if you have to wait to get in. The meals and drinks aren’t inexpensive, but don’t let price stand in the way of ordering the chargrilled oysters as an appetizer. We talk about those oysters often! The rest of the menu offers a great selection of Cajun cuisine; it’s best for everyone to order something different and share. The Delachaise
The Delachaise wasn’t our first choice for a drink, but The Columns was closed for a private event and the staff recommended it as an alternative. The Delachaise is the perfect neighborhood bistro – it’s the kind of place every town would be lucky to have. They offer an outstanding wine and beer selection (I feel like we never see Trappist beers on tap in the U.S., so that was a treat!), and the food being carried to the neighboring tables looked delicious. The patio would be a great place to hang out once the sun goes down and so do the temps. Angelo Brocato
Hands-down the best gelato we’ve had outside of Italy (and our freezer ). One hundred fourteen year-old Angelo Brocato delivered with their Sicilian pistachio and fiore di latte flavors and with the cassata we took home with us to eat the following day. It’s probably best for our waistlines that New Orleans is a flight away from us, and not our hometown. But we can live vicariously through you, so promise you’ll get a scoop for me when you go? What to See and Do in New Orleans Walk Around the French Quarter & Bourbon Street
Depending on what time of day you visit, Bourbon Street and the surrounding area will probably look very different than these photos. We walked around the densely-foggy area mostly before 10 a.m., as the workers were arriving to clean up from the previous night’s debauchery. We were blown away by the litter, the smell, and the fact that every day begins like this. After the streets are cleared of tossed cups and bottles, large trucks ramble down spraying massive amounts of soapy water to wash away everything else (pro-tip: take cover). I have to admit, seeing the aftermath of the previous night somewhat sullied the pretty architecture for me. French Market
Touristy for sure, but if you’re looking for an extra-large dose of New Orleans in one go, the French Market might be your answer. You’ll find food, drinks, souvenirs, and other goods for sale under the long overhang. This is probably a good place to pay close attention to your wallet, phone, and/or purse. Backstreet Cultural Museum
If you can only visit one museum while you’re in New Orleans, make it the Backstreet Cultural Museum . It’s not very large, but this former-funeral home is crammed full of cultural history, knowledge, and tradition. Our tour guide, Dominique, shared her insider knowledge about the customs associated with jazz funerals, social aid and pleasure clubs, Mardi Gras Indians, and Skull and Bone Gangs. In other communities, traditions seem to have fallen by the wayside, but ceremonies and celebrations still thrive in the African-American communities in New Orleans. If you’re lucky, Dominique’s father just might appear and share some of his first-hand stories of local musicians and parades. Ace Hotel
Normally we wouldn’t step foot in a hotel on a day trip, but the Ace Hotel offered a nice blast of A/C on an increasingly-warm day. Plus, you don’t have to be a guest to head upstairs to the roof (but you do need to show ID), where there’s a bar, pool, and lounge chairs. We opted to sit in the lobby lounge to charge our phones and grab a drink while writing post cards, but the choice is yours! Festivals
I haven’t done the research to guarantee it, but it seems like there’s a festival every weekend in New Orleans. In addition to Crawfest, we also attended the Freret Festival, a street fair of vendors, live music, and tons of good eats. Be sure to check online before you go to see what events are taking place! Know Before You Go: New Orleans
Louis Armstrong New Orleans International Airport can be directly reached from both domestic and international destinations ( full list here ). New Orleans’ streetcar system covers a lot of ground for the cost of a daypass, but the cars don’t run as frequently as you may need if you’re only there for the day. We relied on Uber, Lyft, and our own two feet to get around the city.
Don’t underestimate the heat and humidity, even in months that are usually mild elsewhere. Stay hydrated (especially if you plan on drinking!) and stay in the shade when possible. Also important to know are the open container laws; here’s a good rundown on where you’re allowed to imbibe outside . I can’t attest to safety at night as we weren’t in the city after sunset, but it’s a good idea to be a bit wary of people who approach you out of the blue. While we didn’t encounter it, there are a number of bully-scams that are supposedly common in the city. One such scam involves a person stopping you and saying, “I bet I know where you got your shoes.” Just about any response is an acceptance of the bet, and you may get hustled for money after the answer is revealed (FYI – it’s, “on your feet”– now pay up!). You also may encounter people giving out phony “citations” and demanding money. Your best bet is to keep walking, say no thanks, or laugh them off with an, “I’m from here.” As in any large city, you’d be better off by safeguarding your valuables to prevent pickpocketing (and in the meantime you can check out my roundup of pickpocket-proof clothes and accessories ). With more time
While our one-day visit to New Orleans was definitely worth our time and money, we only scratched the surface of what the city has to offer. With more time, we’d stroll the shops on Magazine Street (the only shop we visited was UAL , and we just popped in and out), take a cemetery tour early on a foggy morning, attend a jazz concert, see some animals at the Audubon Zoo or Aquarium of the Americas, get a psychic reading, and perhaps even indulge in a ridiculously large drink on Bourbon Street or from a drive-thru daiquiri shop ( yes, you read that correctly ). Have you visited New Orleans? What is your favorite New Orleans food or drink?

Huh. Just realized that of my very modest collection of Indian cookbooks, about 75% is focused on vegetarian food. I suppose I just cook Mom’s recipes for chicken, mutton and fish – or use some from good blogs.
What kind of regional cuisine do you want recipes from? Let me know and I can recommend some blogs maybe. Bongmom’s blog is the one I’ve been following for 10+ years now for Bengali recipes.

Kuala Lumpur Travel Guide: Quick Tips for First-Time Visitors

A Quick Kuala Lumpur Travel Guide Where is it? KL sits around the southern, west coast of Malaysia. While it’s its own area, it does geographically sit within the Selangor state, which borders the Malacca Straits. What is it? I mean, it’s KL! It’s the capital of Malaysia in all sense of the word — literal, political, financial, cultural, etc. In Malay, it means “muddy confluence,” and was officially established in 1859. For travelers, a big thing to note is that it’s the main hub for Air Asia, aka the cheapest budget airline around. Most people come through on long layovers. When should you go? I think anytime will be fine as the weather is so constant. If you don’t want to deal with the rain, then I’d avoid November – March. I was there in March, and it was fine (only some rainstorms in the afternoon). However, I read that November is considered the wettest month. How is the weather? The weather is hot, sunny, and humid all year round. Its climate is considered a tropical rainforest climate. Seriously, look up the average temperatures, and it’s pretty much the same January – December! Expect to sweat. I will say, because of this, the city is built to be ever so slightly cooler. I’d say it’s much more bearable than Seoul in the dead of summer but I found Singapore to be much breezier. How Do You Get to Kuala Lumpur?
There are multiple ways to get into KL depending on where you’re coming from! By Plane Everyone coming to KL from abroad most likely will use the Kuala Lumpur International Airport (KLIA) . If you’re flying a budget carrier, you’ll fly to and from Terminal 2 (KLIA2), and all the rest are to Terminal 1 (KLIA) . It’s about an hour from the city centre, though if you have time, stop half way to Putrajaya!
From KLIA, you can do a few things: Use Grab Take the KLIA Express, which goes to KL Sentral I booked a shuttle both ways because of my flight time arriving, but it’s the most expensive option. I wish I had realized how easy Grab was to use because it’s a fraction of the price to just to use them! Less common is the Sultan Abdul Aziz Shah Airport (SZB) or Subang Airport . Once upon a time it was KL’s main airport, but now it’s used mainly for domestic flights and some to Indonesia, Thailand, and Singapore. It’s about 30 minutes from the city centre. By Train I’m not super familiar with the train system in Malaysia as I didn’t need to use it, and most people I know have just flown or taken the bus. By Bus I used a bus to get to and from the Cameron Highlands from KL, and I’d highly recommend them. They’re spacious, easy to book, and the timetables aren’t too far apart. Use Easybook to help you buy tickets! It’s the same price as buying in the terminals. How Do You Get Around? I’m going to admit right now I didn’t use a single thing of public transport in KL. I knew it existed, but it was just so much easier to get a Grab, which is like Uber or Lyft, and still super cheap. (Use GRAB09012015 to sign up) If you plan on using public transport exclusively and know you’ll be using it a lot, get the Touch ‘n Go card to preload. By Bus The bus system in KL is called the RapidKL Bus. Like I said above, I have 0 experience with public transport, so I can’t vouch for what they’re like! Make sure to tap when you get on the bus and when you get off. By Subway/Metro For the main part of the city center, there’s the Mass Rapid Transit (MRT) line that covers the big spots around there, and the Light Rail Transit (LRT) which covers most of the city outside of the center. For Batu Caves, if you don’t want to use Grab, you can use the Komuter trains. My best advice is to use Google Maps and follow what it tells you to use on your route. By Taxi Everywhere I read recommended against taxis because they rip you off. So I didn’t use one at all. Again, I just used Grab. By Car You can rent a car for KL, but I don’t think it’s the most necessary. I met with friends who had cars there, and, of course, it’s more convenient. However, the roads in KL are, to put it lightly, a hot freaking mess. Even experienced drivers got confused easily. While I waited for my Grab drivers, I would watch them get turned around every single time!
Hop On, Hop Off Bus And, like most major cities in the world, KL has its own hop-on, hop-off bus. It covers 27 stops and over 60 attractions, and may be a good option if you don’t have a lot of time or are with people who fatigue easily. Check here for more details + rates Top 5 Things to Do in Kuala Lumpur Check here for my more comprehensive list of things to do in Kuala Lumpur 1. Go up KL Tower This is by far the most obviously touristy thing you can do in Kuala Lumpur, but I say it’s worth it just once! As the 7th tallest tower in the world, it’s 1,381 ft (421 m) and has been around since 1996. There are two options. You can just do the Observation Deck or you can by a ticket for both the Observation Deck and the Tower Sky Deck. I say splurge a tiny bit and go up to the top! It’s actually much cheaper to get online, so I’d book tickets ahead instead of buying it at the door. I paid 99 RM (~$24 USD), and on Klook, they have a package for only $16 – Get tickets here Also, the KL Eco Forest Park with the series of suspension bridges is in the same area, so you can do both. 2. Visit the Batu Caves The Batu Caves! They’ve become a bit Instagram famous because of their recently painted staircase. They’re a series of limestone caves and temples and has ben around since 1891. The Tamil shrine is one of the most popular non-Indian ones. There is no entrance fee (at least when we went around 7:30 am). Make sure you take your shoes off where it says and dress appropriately (shoulders and legs covered). Check here for tours that include the Batu Caves 3. Eat and indulge in the mix of Malay, Chinese, and Indian cuisines. Did you know Malaysia is a mix of cultures and cuisines — Malay, Chinese, and Indian! This means you get three different cultures in one place, and the food options are endless . I’m working on a post to show you guys where I ate, but in general check near Petaling Street (Jalan Petaling) for specific Chinese dishes and Brickfields for Indian.
If you’re unsure where to start, try one of these food tours:

How Food Delivery Services are Changing Our Eating Habits & Lifestyle

By Bharat May 4, 2019
The way we dine has changed dramatically over the past few years, particularly when it comes to ordering in.
Back in time, we planned our meals out every day, spent hours preparing and cooking them and then all sat around the table as a family to enjoy the results. Today food needs to arrive on our plate quicker than ever, whether that be through cooking, or tapping just a few times on our smartphones.
While millennials – aged between 20 and 35 years, set the tone for trends today – not just clothes and music trends, the food trends are largely influenced, people even more aged are reshaping the food industry as we have come to know it.
The menus in the restaurants, the foods available in the supermarkets have changed dramatically. One market that is shaping it all is the food delivery, which has made choosing cuisines and having fresh food delivered to your doorstep as easy as clicking a button.
In the last few years, hyperlocal food delivery services have been competing with each other to reach you the fastest and lure you into their massive variety with attractive discounts. This has completely transformed how we eat and has changed our habits in a number of ways.
There are all manner of delivery services now available, from the more traditional takeaway services to restaurant standard turning up at our doors and online food shops to ingredients complete with recipes. And they have been using and trying all sorts of new ways to reach you – then be it delivering pizzas with drones or reaching you in floating food carts . But how are they changing our habits for the better, let’s find out? Teaching Us to Cook
For many ordering food is primarily down to the lack of cooking skills, but a number of services will now deliver you ingredients and a complete recipe guide on how to cook them. In many cases, you’ll find top class, fresh ingredients that are a million miles away from the fried chicken, greasy pizzas and mystery meat kebabs usually associated with takeout food.
More and more restaurants are being added to the rosters of these apps, although it does depend on where you live and the restaurants operating in the area. If you live in the countryside, what’s available will naturally be significantly less than in the city. Giving Millennials A New Way in Life

Making various ingredients through the recipe delivery services and all manner of restaurants through takeaway offerings is making different cultures’ food more accessible, which is opening up new flavors to hundreds of people.

Opening up to new flavors is not only fantastic for yourself, but it can also introduce children early to dishes that we otherwise wouldn’t be able to make.
It’s expanding and integrating diverse cultures further and creating a world where in many cities no flavor is off menu. It’s Earning Many of Us Money on the Side Too
