One of my all-time favourite dish and comfort food is masala curd rice.
I always make some extra rice and leave it overnight in the fridge. Then the next day I take the rice, mix it with fresh curd, chopped onions, green chillies and sometimes some steamed veggies too, give a piping tadka of ghee, rai, hing, dried red chillies and lots of curry leaves and dig in. All is well with the world on that day, and with my stomach too.

The fact is that boiling rice and keeping it in the fridge to use it the next day does not make the rice baasi (stale). Rather it boosts its health quotient in a surprising way. This way the RS content of white rice increases tremendously.
What is RS?
RS (resistant starch) is the third, lesser known type of fibre that our food provides (other two commonly known are soluble fibre and insoluble fibre). This is a special kind of starch that passes through the small intestines undigested and unchanged. So it helps us stay lean and healthy as it delivers satiety, thus help reduce food intake and fat accumulation.
RS also functions like soluble, fermentable fibre, which reaches the intestines and helps boost the good bacteria. So basically it works like a superfood for our digestive system. RS also helps reduce the risk of excess glucose in the blood while supporting health colon cells and acts as a natural fat-burning agent.
This is precisely why every region of the country has a couple of traditional dishes made with leftover rice. There are in fact as many ways to cook leftover rice in India as there are cuisines.
I love the masala Bhaat my sister makes, in which she loads it with peanuts and coconut. Then, there is Phodnicha Bhat — a Maharashtrian version of lemon rice prepared mostly as breakfast with previous day’s rice. I learnt this from a friend, and I end up having a couple of times a month at least. Having this for breakfast is rather smart as including some high RS foods in the first meal will keep one full for long and keep hunger pangs away.

Maharashtrians also make Vaangi bhaath with curd, tomatoes and good masala. In Karnataka, the same dish is made with tamarind pulp and the Bhat masala powder. In Kerala, I am told that leftover rice is left in water overnight. In the morning they add green chillies, cooked tapioca, any leftover veggies, some curd and salt, mix it well and gulp it down. I am sure they stay sorted until lunch time. In Gujarat, they make something called Vagharela Bhaat, a kind of fried rice again.
Similarly Pakhala bhaat in Odisha — called panta bhaat in West Bengal — is rice porridge where leftover rice is covered with water and left overnight to ferment. This lightly fermented rice is eaten the following morning with salt, lime and chillies. A similar preparation in Tamil Nadu is called pazhedhu saadham which means old rice. Rice is immersed in water overnight to prevent spoilage and the next day, it is mixed with buttermilk and salt, and mashed to make gruel.
Lemon rice, tamarind rice, coconut rice, fried ghee rice — you name it. And have you tried making rice patty from leftover rice? It is delish!
And then there is this amazing tangy and spicy rice my mother makes with raw mangoes, red chillies and coconut — goes perfect with raita. Waiting eagerly for the mango season to begin for this one.
A bonus hint here is that boiled and cooled potatoes deliver the same RS benefit too! So indulge in both — it’ll do your gut and health a lot of good. I’m partial to Indian, Szechuan, Middle Eastern, Vietnamese and Korean restaurants. Can anyone recommend places that serve those cuisines? Also, are there any big asian markets in Ft Worth like H-Mart or 99 Ranch where one can buy asian veggies and ingredients?

(Marisa Charpentier/Community Impact Newspaper) By Marisa Charpentier | 7:14 am March 19, 2019 CDT Mar 15, 2019 It was an unusually cold February day, but some 3,000 people flocked to the Lakeline area for the second rendition of Far East Fest. The outdoor festival, which brings together Asian restaurants and entertainment groups, was a testament to the growing presence of Asian cultures in the Cedar Park, Leander and Austin areas. The Asian population is the fastest-growing population segment in Texas, and Central Texas is no exception. Since 2010, Cedar Park’s Asian population has grown by 225 percent to 6,315 people, now making up 9 percent of the city’s total population, according to U.S. census numbers. In Leander, the Asian population doubled in that time period, now at 1,133, or about 3 percent of the city’s population. These numbers include people of a variety of nationalities, including Indian, Chinese, Korean, Vietnamese, Filipino and Japanese. In the last year, a number of Asian-owned and -focused businesses have opened in Cedar Park, Leander and the Lakeline area of Austin. The region has also caught the attention of major chains such as H Mart. The Asian supermarket opened on Lakeline Boulevard in Austin in February 2018 and features an eight-restaurant food court. Several Asian businesses have opened up nearby since. Min Choe, co-founder of Far East Fest and restaurateur, owns the fusion eatery Donkey Mo’s Korean Fried Chicken, which has locations inside H Mart and Lakeline Mall. “I think [H Mart] was a clear signal that the Asian community is already huge in the Austin area but more importantly growing at a rapid rate,” Choe said. “What’s awesome is that a lot of the very diverse background that Austin is known for has transferred and been absorbed by the growth in Cedar Park, Leander and Round Rock.” Reasons for growth Choe has lived in Austin since he was 4 years old, after he and his family immigrated to the United States from South Korea in 1982. Choe said he noticed the influx of the Asian population when Samsung Austin Semiconductor, a South Korean electronics manufacturer, came to Austin in 1997. “I think they helped pioneer the Asian immigration into the Austin area,” Choe said. “Since then, we’ve had some presence with LG and other Korean-backed companies.” Marina Bhargava, CEO of the Greater Austin Asian Chamber of Commerce, said Austin being a tech industry giant is a reason for growth in the Asian-American community. “When you look at the workforce in tech, a lot of them are Asian-American for many reasons,” Bhargava said. “Part of it is just our culture, I think. … It’s a safer career to get into.” Unlike New York City and San Francisco, Austin does not have a Chinatown, or a single area where many Asian-Americans reside. The Asian-American population is more scattered, Bhargava said, though most of the population tends to live in northern parts of Central Texas, including Travis County and Williamson County. She said a number of factors draw Asian-Americans to suburbs such as Cedar Park, including housing and good schools. Amy Sanborn, owner of Amy’s China Cuisine in Cedar Park, was born in China and moved to the United States in her 30s. In China, she worked as a pediatrician, but when she came to the United States, her credentials did not carry over. She took nursing courses in California but eventually decided to pursue a career as a restaurant owner. She and her husband moved to Leander in 2006 because she was looking for a place with a small-town feel and access to good schools, she said. “We love it here,” Sanborn said. “It’s a safe, good place to raise kids. The school district is really good, too.” A diverse community Since opening Amy’s China Cuisine in the 1890 Ranch shopping center in Cedar Park in 2012, Sanborn said she has seen many other Asian restaurants pop up around hers. While at first her restaurant was one of the only ones serving Asian cuisine on the block, she said, now the center is home to Takara Sushi, Pho Thanh Ni, Chada Thai and EurAsia Ramen. “I take it a good way,” Sanborn said. “I take it like a challenge.” Just as Asia is vast and contains many countries and cultures, the Asian-American population in the area is also diverse. Choe said he has noticed the different groups within the Asian-American community become more supportive of one another in recent years. He said when he was growing up, he felt there was more of a disconnect not only between Asian communities and other racial groups but also between various Asian nationalities within Austin. “Recently, like in the last 10 years, there have been a lot more community-focused organizations popping up really helping to drive the Asian community, the awareness, the economical advancement, the advocacy for Asian communities,” Choe said. The Greater Austin Asian Chamber of Commerce, which formed in 2012, seeks to be a bridge between the mainstream community and the Asian business community, providing guidance and networking opportunities for business owners in Central Texas, according to Bhargava. The Asian American Cultural Center and Asian American Resource Center in Austin, both of which are planning their own expansions, serve the Asian community. Austin Community College is currently exploring plans for its own Asian culture center, according to ACC spokesperson Jessica Vess. Passionate about supporting small businesses, Choe said he created Far East Fest in 2017 as a way of celebrating and bringing together various Asian cultures in one place. “There have been a couple of small food festivals that are specific to an Asian country, but there wasn’t anything that combined all the countries,” Choe said. “The goal now is to turn it into an iconic community event.” Asian-Americans in Cedar Park and Leander are opening a variety of businesses, not just restaurants. Shivam Patel and Denise Cua are Asian-American and opened Perch Dentistry in Cedar Park in February. The two said they designed the office with the goal of creating a modern, spa-like atmosphere they felt many dentist offices lack. Patel said they chose Cedar Park because of the opportunity to build their own space, a chance they struggled to find in the large, saturated cities they used to live in. “It would be very tough to have [started Perch]back in Boston or California,” Patel said. “You’re either buying someone else out or opening up in place of another. There’s no ground-up stuff happening as much as there is out here. The growth is a huge plus here.” Cua said she hopes to be someone Asian-American patients can relate to. “We’re here for them,” Cua said. Challenges Bhargava said challenges for some members of the Asian-owned business community include language barriers, in addition to the challenges faced by other business owners in rapidly growing areas, such as rising rent prices for commercial spaces. “For some of them who are not totally proficient in English, that can be a barrier for them to understand the different resources or opportunities and also the different regulations they need to comply with,” Bhargava said. Sanborn said despite studying English in China as child, by the time she moved to the United States, those skills had faded. Over the years, working in her restaurant has helped her improve, she said. “[My customers] helped me a lot,” she said. “I’m proud of myself since it’s my second language.” The Greater Austin Asian Chamber of Commerce completes studies analyzing revenues of Asian-owned businesses in Central Texas. The chamber’s latest study from 2016 shows disparities exist among different demographic groups within the Asian business community. The study shows Vietnamese, Filipino and Korean communities tend to have lower revenues for their businesses than Chinese and Indian communities have. Bhargava said some reasons why this difference exists could be language or education disparities among ethnic groups. Some may have come to the United States as refugees, such as during the Vietnam War, while others hailing from China and India may come here for schooling or high-skilled tech jobs, she said. “They’re in a privileged position right off the bat even though they’re new to this country,” Bhargava said. Cua grew up in the United States after her parents emigrated from the Philippines. She said she was the first in her family to get a degree beyond a bachelor’s. Since none of her family members owned a business, she said she struggled to navigate opening her own. “I was afraid because I feel like I have the experience and the intuition for business owning, but without guidance it’s like a shot in the dark,” Cua said. Combining cultures The growing presence of the Asian community has led to a blending of cultures. One example of this is the rise of fusion cuisines. Donkey Mo’s Korean Fried Chicken, for example, takes influences from Korean food in its chicken batter and flavors and pulls from Southern comfort food, selling creamed corn and fried pickles. “I challenge people to consider, ‘Why does it have to be authentic?’” Choe said. “At the end of the day, I think it’s better to combine influences. … You take these influences from various other countries and make something really delicious.” Choe said that same blending of culture s is important for the business community as a whole. He said when the Asian business community and other existing communities work together, they flourish. “They all not only support each other, but they depend on each other for growth and for success,” Choe said. “My advocacy for the Asian community is trying to get everyone to work together and prosper together.” Twitter Share this story

So, what is it, exactly? Curcumin, the active ingredient in turmeric root, has been a mainstay of Indian cuisine and ayurvedic medicine for centuries. It makes up 2 percent to 5 percent of dry turmeric spices and gives the spice its yellow color. Curcumin is available as a capsule supplement (like Thorne’s Meriva 500 ), a powder, or in its whole root form.
“Curcumin functions as an anti-inflammatory and an antioxidant, with significant health benefits,” says Kelli Fierras, R.D., a nutritionist based in New York. “Most people will benefit from introducing this into their diet unless otherwise told by their doctor or dietitian.” What the studies say.
Though extensive research has been done on the effects of curcumin—many suggesting that the potent antioxidant neutralizes disease-causing free radicals —more studies are needed to understand how it balances a healthy inflammatory response in the body. For starters, ” research shows that it supports brain development and assists in maintaining normal blood sugar levels,” says Fierras. “Curcumin may also reduce LDL cholesterol levels and improve triglyceride levels—both are essential to heart health.”
Studies have found that curcumin has the potential to prevent neurodegeneration and Alzheimer’s disease. It’s an area of ongoing research, and studies in vitro and in animal models so far have yielded some promising results. Curcumin is an especially appealing treatment method because it may inhibit the development of Alzheimer’s in many different ways—with few side effects.
Similar to how it may help fight neurodegenerative diseases, curcumin appears to target cancer in multiple ways. Curcumin’s antioxidant properties protect cells from the damage that can lead to cancer in the first place. In addition, animal and in vitro studies have found that curcumin suppresses the growth and development of tumors .
Curcumin’s anti-inflammatory properties also make it a great option for those suffering from arthritis or chronic joint pain. In one study comparing the effectiveness of a prescription pain medication and curcumin supplements, patients saw significantly greater improvements in rheumatoid arthritis symptoms when taking curcumin. The most efficient way to get it.
The Joint FAO/WHO Expert Committee on Food Additives (JECFA) set the acceptable dietary intake of curcumin as 1.4 mg per pound (3 mg/kg) of body weight per day. But most people don’t get close to that number. Image by Thorne Pinterest
“It’s hard to consume enough curcumin in your diet unless it consists of turmeric, curry powder, mango ginger, or a supplement,” says Fierras. And there’s another hurdle: “The challenge with curcumin, either alone or in turmeric, is that it is not easily absorbed by the body.”
In order to up the absorption and bioavailability of curcumin, always consume it with black pepper or a fat, such as sunflower oil, olive oil, seeds, or avocado for maximum absorption. “If you’re choosing a supplement, check the ingredients,” says Fierras.

African family dining at Akwaaba

Akwaaba is not a take-out restaurant. Well, you definitely can get anything on the menu to go, and they will happily take your to-go order, but to really enjoy Akwaaba, dining in is the way to go. Sibling owners Mohammed and Naima Ahamed named this African cuisine spot Akwaaba because the word literally means “welcome” in Akan, a language spoken in their native Ghana. Dining here is meant to be a community event where everyone is welcome. The grills and fryers are situated so that you can watch them prepare your food while you wait if you so choose. Both Mohammed and Naima love to cook and have been cooking all their lives. They take time and care with all food orders so that they meet their high standards, and it shows. Mohammed is always sharply dressed when he cooks. I’m not sure if that is part of the charm of the restaurant, but I do envy his wardrobe.
Akwaaba opened in September 2018 in the College Town area of Mount Hope Avenue, in what used to be an India House Express before that restaurant moved to the building next door. It’s a small place, but there’s a good amount of seating. Often you end up conversing with other customers, which is partially the intention. The last time I visited, an elderly woman was regaling a pair of college students sitting adjacent to her at another table. They were so riveted by her words that I thought they already knew each other, but they’d only met a few minutes prior to my arrival. Eventually, they were all at the same table, still sharing stories.
The food is well worth the time it takes to make it, and all portions are big enough to share. My favorite is the Somali samosas ($4), sometimes called sambusas. Similar to the Indian samosas, this appetizer is a set of six lightly-fried, thin dough tetrahedrons stuffed with vegetables, beef, or chicken. Instead of a choice of chutney, Somali samosas are served with a dipping sauce of stewed tomato, pepper, and onion. I could eat these all day, but then I would miss out on the fried plantains ($4.50) or the fried chicken ($8) appetizers. Plantains are always hearty and sweet, so I can satisfy my sweet tooth and not feel like I am consuming empty calories. When the fried chicken came out, I thought we had mistakenly made a double order. Four huge chicken drumsticks, nearly the size of turkey legs, were topped with the same tomato pepper onion sauce that came with the samosas. This is an appetizer made for sharing, and I was glad I came with a large party. It seems that all of the appetizers are made for more than one person, or perhaps the environment got me into the spirit of sharing my food as much as we were swapping stories.
The appetizers come in abundant portions, and the main dishes even moreso. My first choice was the ampesi with fried fish ($14). Ampesi is boiled yams (or plantain) served with a spinach stew. The digital picture of this meal displayed above the cash register does not do it justice: I expected a medium-sized filet with some spinach and plantains, but I was presented with a slab of boneless fish on top of a wealth of savory-seasoned spinach and sweet yams.
The second entrée I ordered was the aboboi with plantains ($9). As large a dish as the ampesi, this is a vegetarian black-eyed bean stew with fried plantains on the side. The most popular meal at my table was the jollof rice with chicken ($12). Jollof is rice cooked in the aforementioned tomato-pepper-onion medley, and the chicken is also cooked in the same mix. The dish is simultaneously sweet and savory, and the rice has a light red hue from being infused with the vegetables and oil. One warning: if Mohammed or Naima advise you that a soup is spicy, take them at their word. The pepper soup ($5) is delicious, but I foolishly thought that I could handle a heaping spoonful of it. The good news is I have a new go-to meal to consume when I feel a bit congested.
There is something to be said about going to a restaurant where you don’t feel rushed, where they are not trying to get you out the door as quickly as you sat down, where you can take your time and relax and chat with your fellow patrons while enjoying a bounty of food made with care. I enjoyed the food there as much as I enjoyed my conversations with Mohammed and other guests. Akwaaba is a welcome respite from the world outside.

You are spoiled for choice. We were there for 8 days and was hard to fault any restaurant on ambiance, quality of food and service. Tipping of 10% has crept in as a bit of a norm now.
It really depends on what your Boss likes to eat, lots of Italian, Traditional and European options, but not a lot in the spicy cuisine like Thai, Indian, Mexican, Malaysian, well any of that sort of food.

Charming and quaint hotel

The hotel is situated within the French Quarters and you can easily get around Puducherry by foot. The staff are attentive and helpful. They gave us a lot of recommendations on what to see in Puducherry. The highlight of the whole hotel to us was probably the food. We had dinner twice at their in-house restaurant and we tried both their French and Indian cuisine. Everything we ordered was tasty but the real winner to us was the dessert. Their carrot-pumpkin-beetroot halwa is a must try! nWould love to come back.
