He spent much of his childhood with his grandmother, who owned a west African restaurant in Harlem. Today’s article will focus on popular Somali dishes enjoyed by Somalis across the world.

Despite being a small country, Somali food is not all the same and varies between regions. In the North (Somaliland), many tribes have an Arab influence where they eat Falafel, Hummus and Pita Bread. And in the south where I am from, we made our own twist on Italian dishes.

First, let’s start off with the basics!




Bananas/ Moos

– Eating bananas with a meal is entrenched in Somali culture. It is served as an option to be eaten with lunch and dinner.

– Somali food is typically heavily seasoned. So, the sweetness from the banana balaces yet adds an enhancement to the flavour. Most dishes are served with a whole unpeeled banana on the side.

– My recommendation: Bariis iyo moos – Rice and banana. To me, any rice dish is not complete without a banana.

– Similar to the Ethiopian Injera . But the difference is in the size and how it is eaten. While Injera is a lot
larger and eaten with stews, Canjeero is smaller and eaten both sweet (drizzled with olive oil and sugar) and savoury (with curries and stews).


Chilli/ basbaas :

– Somalis use basbaas to gives a little kick to a dish.
– Unlike our neighbours, we do not add it to the dish. Rather, serve it on the side as a condiment.

Tumeric/ Huruud :

– Turmeric comes from the root of the Tumeric plant that is typically used as a spice in its dry form.

– Though for us Somalis, it is not just used as a seasoning. But it is also an ideal beauty product.
Mixing turmeric with milk, water and even honey creates a golden yellow paste which cleanses the skin and gives it a natural glow.

Pasta/ Baasto:
– It’s debatable what our national dish really is. And I’m being biased here when I say its pasta, or baasto as it is my favourite dish. After the Italians invaded Somalia, they brought with them, pasta. But we made it much better. What distinguishes Somali pasta from its Italian counterpart is the use of xawaash , spices. The sauce is a lot thicker and richer in flavour and can be eaten with moos.

– My favourite way is to eat baasto toono (tuna pasta) with cheese and salad.



One-pot rice/ Bariis Iskudeh Karis:
– This dish is an aromatic combination of rice and meat. It is prepared in the rich flavours of cilantro, coriander, pepper and garlic.

Jerky-Style Beef Cubes/ Oodkac :

– This is what we prepare to preserve meat.

– Its origins come from Nomads who endured long periods of dry days. It was perfect on days when they had nothing to eat.

– Its currently prepared for long journeys such as pilgrimage and weddings.

– In Somalia they use Camel meat, which is too large to eat in one day, and is preserved whereas beef is widely used outside. It is cooked with canola oil and preserved with ghee/ clarified butter.
It can be eaten with canjeero, bariis and even baasto.



Snacks/Sweets:


Samosas/ Sambuus :

– Hot, crispy and spicy.

– Everyone knows Indian samosas. But how about Somali sambuus ? The difference is, our spices tend to be more aromatic than hot. Although some people prefer to add extra chilli.

– It can be eaten as a regular snack, although its quite difficult to make as we create it from scratch.
– Commonly eaten during Ramadan.


Bur:

– Most cultures have some sort of fried dough. While most East Africans have mandazi, Somalis have Bur.

– This is served as a snack and is often complemented with tea. This combination makes a good casariye/ afternoon tea.


Malawah/Malawax:

– I’d call this canjeero’s better half. It is considered a breakfast food but, in my household, so much is made that you can eat it as a snack throughout the day.

– It is drizzled with ghee or olive oil and sugar. Or even lemon. Goes best with tea.
– It can be served with savoury dishes though it is not as absorbent as canjeero.


In my opinion, Somali food is best compared to fusion food. Although we do have our own native dishes, it certainly is impressive how we managed to put our own Somali twist on foods from neighbouring countries.

With over a decade in the hospitality game, he has held various leadership roles in F&B operations across the Middle-East and Southeast Asia. Here, he gives us some insight into how places like Rang Mahal stay sharp for so long, while other venues seem to taper off after a few years. Sundeep Nellore, Director of F&B at Rembrandt Hotel The restaurant game is a fickle business, especially in Bangkok. How have you stayed on top of the game for the past 25 years? Rang Mahal went through challenging times after the 2008 market crash but rebounded and has continued to have success year after year. Highly supportive owners through those challenging times and a “no defeat” attitude kept us looking for solutions and driving us to excel in Bangkok’s competitive Indian restaurant scene. Key factors that define our success today are consistency in the quality of products and service we offer and re-inventing and adapting ourselves to consumer trends and a strong team, to go the extra mile for our customers.
Rembrandt has a long list of well-known F&B venues, like Rang Mahal, Mexicano, Da Vinci and most recently your 1826, Mixology & Rooftop bar. What are your thoughts on managing these outlets?
I am certainly proud to be running three restaurants that excel in their categories with some the best food and service around. Our weekend brunches in all three outlets have been super busy with guests from outside the hotel. Mexicano is a favorite for many locals to enjoy authentic Mexican cuisine with our Latin band. 1826 is sitting on the fifth spot among all bars in Bangkok on TripAdvisor in a short span of six months, and we aim to maintain that and eventually make it to number one. The next project would be the renovation of our 650 sq.m ballroom. It will start in early January 2020 and the aim is to have the best ballroom in Sukhumvit. What are the keys to success in Bangkok’s F&B scene for you?
It boils down to a few simple things. The first is staying innovative and adapting to consumer trends. The next is maintaining consistency in the quality of products and services offered. The last, but not least, is sensible marketing.
Aside from this extremely competitive market, what do you find different between Bangkok’s F&B scene and the Middle-East’s? Your Pick?
Certain areas of Middle-East are reserved when it comes to the beverage aspect. Dubai and a few other places are surely an exception to that, but even in those places there is an imbalance between supply and demand. Bangkok has seen a continuous increase in tourist numbers, which results in new trends in the F&B scene with ever-changing consumer trends. If I had to pick one, I’d say my preference is Bangkok; the F&B scene here is surely more vibrant with all its offerings and has something for everybody.
What are some of the challenges involved in running a restaurant here? Finding quality manpower is a big one, and it has been difficult for the past couple of years. Keeping up with the constantly changing consumer trends is also tough. The price war between venues is another big one.
What makes Rang Mahal’s style of Indian food different/special compared to the other venues in town? We have perfected recipes over time and adapted to trends – we will continue that. I feel confident that we have the best food in town. Chef Rajan has headed Rang Mahal for the past 16 years and is very hands-on when it comes to the selection of raw materials. It’s very important that we stick to traditional methods of preparation, which is what makes us stand out.
What’s one piece of advice you would give to someone opening a restaurant for the first time? Have a vision, do your homework and build a strong team.
Where is Rembrandt headed? We have a new general manager, Christian Bernkopf, who joined last October with a wealth of experience. We have had some of the highest occupancies in this area over the last couple of months, thanks to our team members who make returning and new guests feel at home. Surely the market will see more of Rembrandt as a brand and its famed F&B venues in the following years. There are drapes on the ceiling and walls. Brass lamps hang overhead. A calm hymn plays on somewhere in the narrow room — low enough to set a soothing mood, but not so loud that it hampers conversation. “This one is a prayer, we have some songs as well,” says Mohamed Moiz, the man behind Al Souk.
The idea behind Al Souk is to acquaint Chennai with the “authentic” taste of West Asian cuisine, “not the Indianised or Americanised versions we are used to,” says Moiz. But the first thing we taste feels very nostalgically Indian.
Karkade is a cool, tea-like drink that you can order with hibiscus version or without. At first sip, however, I am reminded not of a flower, but of the exceedingly sour, beloved little berries every child has munched on after school back in the 90s. The colour draws a tantalising line between black and purple — depending on which way you tilt your glass — and is sweetened just enough to be palatable without losing its delicious sourness.
A plate of four little Spanakos pitas follows, with creamy interiors of feta and spinach and crunchy exteriors glistening with oil. But I’m not complaining, because each hot little pita pocket is airy and light, and collapses as soon as I bite in.
Among the vegetarian options, I go for jibnah bel ajeen, a vegetable and cheese-stuffed bread. Soft, slender and over a foot long, the stuffed loaf is cut into broad slices for the diner’s benefit, with curled dough running down its centre like the rim of a pie crust. The bread itself is soft as pizza crust, and the cheesy stuffing is dominated by onion and carrot. At one point, I start sipping the cheesy filling from one end, to prevent it dripping down the other. The fun in this dish lies in just that: the taste itself is mild and forgettable.
Amid all this, we also have a basket of pita and a spread of dips. You have the usual suspects, including mayonnaise and roasted eggplant, but the rust-coloured roasted bell pepper hummus stands apart. It has a slightly burnt tinge to it and is refreshingly different from the others.
But enough about the little bites. If you order the Sultan beef kabab tenderloin, you will receive five sizeable chunks of it served on a bed of pitas, basmati rice cooked with vermicelli, and fries. Not a bad meal for the price, but salt-heavy and a tad too chewy. The kebab khashkash, on the other hand, comes with the same accompaniments and forms a delicious meal for one. The minced meat chunks arrive topped with a tomato relish, and are so soft that they come apart under the fork at the slightest cut.
There are a number of options for dessert, but the one I go for lets me adapt it to my taste. The kunafa looks delicious, with a crispy golden exterior and soft, cheesy interior. But biting into it immediately would be a mistake. Instead, I pick the little jar of syrup that comes with it, and pour. Taste, grimace, and pour again. Till just the right amount of sweetness soaks into my dessert, and I finish my meal, my way.

DINING DIGEST: Summer in the City

The second city has always taken pride in its eclectic mix of international restaurants with cuisines from far and wide showcasing menus to an eager public, and what’s more exciting is that most of these are independents!
Indian Brewery have opened their second site in Solihull town centre. This has all the hall marks of their first venue in Snow Hill, a riot of colour, Bollywood memorabilia and spicy Indian grills.
Coming to Moseley this Summer is Chakana, bringing Peruvian cuisine to the suburbs. The restaurant will be offering Peruvian food, and will specialise in Pisco, (Peruvian brandy) alongside a range of wines and beers. Chef Ortiz
Spearheaded by Peruvian born chef, Robert Ortiz, he has quite the pedigree, having previously worked at the Landmark Hotel in Marylebone and the Four Seasons Canary Wharf before heading up Lima in London’s Fitzrovia. I’ve never had Peruvian food so we are looking forward to seeing it on the corner of Woodgate Road and Alcester Road.
Ortiz received the ultimate culinary recognition in 2013 when Lima was awarded a Michelin star. Praised in the guide for his use of “punchy, invigorating flavours”, Lima was the first Peruvian restaurant in Europe to be recognised by the Guide.
Setting up round the corner is Katsu Kitchen. Specialising in of course, Japanese favourite Katsu, the menu also features donburi, salad, burgers, dippers and maki rolls. Previously running a successful kitchen takeover at Bonehead, Katsu Kitchen will be moving into its permanent home in June.
From Peru to Japan we can head to the city or a taste of Hawaii at Kuula Poké. Inspired by Japan, poké started off in Hawaii before exploding in LA. Now, the Michelin Guide is tipping Pacific Rim flavours, in particular Poké as the next big thing.
Luckily for us, Brummies, will be able to head to Kuula Poké in the Great Western Arcade to get ahead of the trend. House Bowls are the signature dish, with a choice of protein on top of a bed of rice and garnished with crispy shallots, spring onions and sesame seeds. It’s all about eating clean here!
If you swing through Grand Central, keep an eye out for Kabaji, which promises to bring the “authentic flavours of Beirut” to Birmingham.
Kababji is a well-known name in the Middle East, with a branch in Wimbledon already. The “Artisan Lebanese Grill” will be offering wraps, the Beirut Box, Sharing Feasts and Middle Eastern classics such as Hummus and Tabboule. Hungry diners can expect food to be “healthy, honest, quick”.
Down off the Mailbox canal look out for Noel’s. With a waterside location overlooking the canal by The Cube, diners can expect great Mediterranean food, carefully crafted cocktails paired with a decadent interior design.
