Native American Chef Wins Prestigious Food Award

WASHINGTON — A Native American chef has been awarded one of the food industry’s highest honors for his efforts in revitalizing traditional indigenous food systems in North America.
On Tuesday, the James Beard Foundation (JBF) announced that Sean Sherman, a member of the Oglala Lakota Sioux tribe from the Pine Ridge Indian Reservation in South Dakota and founder/CEO of The Sioux Chef is to receive a Leadership Award for his work in helping Native Americans reclaim historic food and agricultural systems.
Beard awards, which Time magazine has dubbed “the Oscars” of the American food industry, are given out annually in a number of categories; the 2019 Leadership Award celebrates food system ” visionaries” and acknowledges Sherman’s extensive research into diverse Native American farming techniques, wild food usage and harvesting, land stewardship, food preservation, as well as tribal cultures and histories.
A dish created by Lakota “Sioux Chef” Sean Sherman, which features elk, wild rice, fern fiddlehead, berries, spring onion and sunchoke. “We’re trying to raise awareness of the history of the land and on how to live sustainability on what’s around us,” said Sherman, speaking to VOA by phone during a two-hour drive to Iowa to buy heritage seeds. These seeds of rare, heirloom and open-pollinated plant varieties could disappear if not cultivated and banked.
“Even non-indigenous chefs should be really excited to learn about plant diversity to utilize in their cuisines,” he said.

Prior to the arrival of European settlers, tribes hunted, fished, gathered and farmed a wide array of animals and plants, depending on their locations. By the late 1800s, forced onto reservations that were often far from their traditional homelands, tribes were restricted in their rights to hunt, fish or forage for wild food and forced to make do with U.S. Army rations of flour, lard and salt—ingredients alien to the indigenous diet. The rations were later replaced by the commodity food program.
“That has never been a nutritional program, and it has contributed to the health epidemics that we see in tribes across the country–mass obesity, mass rates of heart disease,Type Two diabetes—you name it,” said Sherman. “A change has to take place, and this is the best way to start to utilize the lessons of our ancestors that would have been passed down to us, if it hadn’t been for cultural assimilation efforts.
In 2014, Sherman launched “Sioux Chef”–a play on the French term sous-chef , the number two person in any restaurant kitchen. The Minneapolis-based business was more than just a catering company; it was a collaboration of chefs, food preservationists, botanists and enthusiasts from several U.S. tribes all bent on restoring pre-contact diets.

Sherman and Minneapolis chef/food critic Beth Dooley in 2017 published “The Sioux Chef’s Indigenous Kitchen,” a cookbook featuring modern takes on traditional ingredients: stuffed squash blossoms, for example, wild-rice cakes or venison with apples and cranberries, all made from ingredients easily found in nature. This earned him the 2018 James Beard Foundation Book Award in the Best American Cookbook category.
This year, Sherman and his team will open a Native American restaurant in Minneapolis, along with a non-profit indigenous food laboratory for shared use. “People can take classes on wild foods and education, agriculture or food preservation, and the restaurant is designed to allow people to develop their skills working alongside us in the restaurant,” he said.”Our ultimate goal is to open up indigenous food labs in cities everywhere.”
He’s also a big proponent of so-called permaculture design — working with nature to meet food needs.
Sean Sherman prepared this modern version of a traditional Lakota dish, Wasna, made with duck, popped wild rice and amaranth, foraged fennel and miners lettuce at the 20th annual World of Flavors at the Culinary Institute of America, St. Helena, Ca. “We want to get tribes to use their open spaces and landscape with the foods that are particular to their regions,” he said. That might be cultivated crops like squash, beans or corn, staples of pre-contact agriculture across the country; amaranth, a highly nutritious grain on which South American tribes once thrived; or wild rice from the Great Lakes Region.
While his work focuses on North American foods and peoples, Sherman said it has important applications for all indigenous peoples.
“We want to become a resource for anyone interested in decolonizing foodways across the globe,” he said. “It doesn’t matter if you’re in Africa or India or Southeast Asia; it’s the same story everywhere. We just want to set the tone.”

Secret Menus and Pop-Ups to Honor San Francisco’s Filipino Food Scene

In April 2016 , former mayor Ed Lee and the city’s Board of Supervisors recognized the need to preserve “the living landmark that is the Filipino community in the South of Market neighborhood and established the SoMa Pilipinas Filipino Cultural Heritage District.” Since then, community organizers have worked hard to make the existing Filipino community more visible to the rest of the Bay Area.
Dinuguan from Manila Bowl (Albert Law) That’s where Desi Danganan, the executive director of Kultivate Labs, a local non-profit business accelerator, comes in. One of his team’s first projects to promote Filipino culture, food and art was a carefully curated night market festival called UNDISCOVERED SF that first launched in August 2017. It became a monthly summer festival, but, if you look at UNDISCOVERED SF’s social media presence today, you’ll see that is has been taken over by a special event called Kulinary Confidential.
When asked for more details, Danganan explained, “Kulinary Confidential is a delicious way to explore the incredible Filipino food scene that exists in our city. The Bay Area is home to the largest population of Filipinos in the country, and there’s so much undiscovered culinary talent here. These chefs are pushing the boundaries of Filipino cuisine and reinterpreting it a uniquely Filipino-American perspective.”

Leicester’s biggest vegan festival returns this weekend, promising a feast of delicious plant-based food.
The popular event, organised by Vegan Events UK, will also feature the likes of clothing, homeware, yoga and children’s activities – making it a great day out for everyone, whether you’re vegan, vegetarian, or keen to find out more about a plant-based lifestyle.
Here’s everything you need to know about Leicester Vegan Festival 2019. When and where is it taking place?
The festival is being held at Athena, in Queen Street, Leicester, on Saturday, March 23.

Food will include an array of plant-based hot and cold dishes, including Asian, Mediterranean, Indian and Greek cuisine, as well as hot dogs, burgers, street food and raw food.

It looks like Mississauga’s once spartan ramen scene is exploding. Recently, Sansotei Ramen opened its doors in Square One–making City Centre a new mecca for ramen. Sansotei, which currently operates locations in Toronto, North York, Markham, Ottawa and Richmond Hill, is known for both the long lineups it tends to generate and its small but satisfying menu. Some soups on the menu include tonkotsu ramen, tonkotsu black ramen, miso black ramen, shoyu ramen, spicy tan tan ramen and tomato ramen. According to Sansotei’s website, the resto’s ramen broth is freshly made everyday with pork bone. Diners can also choose thick or thin noodles and add extra toppings (think chashu, eggs, mushrooms, green onion and more) for an additional charge.

Nomad’s Restobar is another Toronto joint that just expanded into our neck of the woods—and its second location is happily situated in Port Credit. The family-owned establishment, which opened just west of Hurontario on Lakeshore Blvd., also operates a location on the Danforth. According to the resto’s website, head chef David (also known as “Chile”) has been a Red Seal chef for well over a decade and created a menu dedicated to “Global Inspirations–Local Creations.” As far as the menu goes, the resto offers cheese and charcuterie boards, a globally-inspired Wanderlust platter, Kalbi short ribs, a satay platter, ceviche, tacos, sushi, jerk-style wings, chana masala, chimichanga, chicken and waffles, shrimp fried rice and more.

The Clarkson Mediterranean Bistro is a gem of a find in a small and quaint neighbourhood located west of Port Credit in a community called Clarkson Village. The Clarkson Mediterranean Bistro is a restaurant that’s now on my list of go-to places to dine in Mississauga. I had driven by it many times and had it on my list for months – I just wish I had gone sooner. I was floored by the level of service, the flavours, the quality of the food and the affordable pricing. This resto is a prime example of the benefits of supporting local restaurants over the big chains. We tried the California Chicken Risotto includes roasted tomatoes, zucchini and artichokes in a chardonnay and parmesan rose sauce. Risotto can be a heavy dish; however the flavours were on point and balanced with just enough acidity, resulting in a light, creamy and appetizing dish. The rice to ingredient ratio was perfect with substantial chicken, artichoke and zucchini pieces embedded in the silky risotto.
2 ) La Bonita
This is a hidden gem in Mississauga. Their menu is full of amazing options ranging from the famous Colombian platter, the bandeja paisa, to empanadas, patacons, arepas, and so much more. One thing I’ve learned about South American cuisine is that they know how to make a delectable beef tongue! If you aren’t used to it, you may be a tad grossed out by it all, but if you ever muster the courage or are a fan of beef tongue, you have to try it at La Bonita! Cooked to absolute perfection, this meal comes with potatoes, rice, salad, and yucca! These options can be substituted upon request. Finally, their Churrasco. A one inch, AAA sirloin steak that comes out on a sizzling hot plate with chimichurri and all kinds of other flavour! As a side, this dish comes with an entire plate of rice, beans, and sweet plantain; both plates for a very fair $19! La Bonita will make you want to book your next flight to Bogota in a hurry!

Laari Adda, an Indian and Pakistani street food restaurant, recently took shape in the old Bistro Narra location in the Thomas St. and Winston Churchill area and it’s serving up some very fine South Asian cuisine. The restaurant, which is open late, offers dine-in, takeout and catering service. It also offers a bright and colourful interior that draws upon the vibrant decor frequently encountered in India and Pakistan. As far as food goes, restaurant operators say that “Laari Addas in Pakistan are famous for delicious street food and that is exactly what we are bringing back with a modern twist.” One such modern menu item? The huge outstretched layers of sand, the wide moving sea and sun at it’s best behaviours, Goa can be termed as the heavenly retreat for visitors. Why visit Goa!
You better not ask anyone this question. From the locals staying just a hundred kilometres away from this city to the foreign travellers coming from lakhs of miles away, all know why Goa is termed as one of most visited place by tourists around the world. The charm of those beaches, the galore of seas, the authentic Goan food and the serene lifestyle here engulfs you in It’s arm with all the warmth you need. Chefs Julien Lefebvre French chef Julien Lefebvre uses his culinary talent to delight diners with the most delectable dishes at Michelin-starred Château Cordeillan-Bages in the beautiful wine region of Pauillac.
Growing up in Normandy with parents in the transport business, Julien was inspired by the artisans in his family from a young age. However, instead of continuing on in the transport industry, Julien took a different approach to his family’s business, and found his calling in transporting emotions through culinary creations. This was the start of his gastronic career.
In 2002, Julien ventured to London and had his first taste of international gastronomy and the chef found himself inspired:
“I have been greatly inspired by the culinary repertoire of Auguste Escoffier, who is my thought leader in terms of French gastronomy, and chef Alain Passard who transformed my perception of vegetables, making them the centrepiece of his cooking.”
Cooking under the guidance of Michelin-starred chefs including Bernard and Mathieu Pacaud, Frédéric Anton and Éric Cocollos, Julien was introduced to a high caliber of contemporary cuisine, and developed a passion for the refined finishing and beautiful presentation of dishes. Over the 15 years he spent training in these haute cuisine kitchens, Julien acquired a great sense of precision in his cooking, and his current vision of fine cuisine and excellence was forged.
In 2017, at the age of 35, Julien Lefebvre became the new Executive Chef at the renowned Château Cordeillan-Bages, a 17th century charterhouse converted into a boutique hotel and fine dining restaurant at the heart of the Bordeaux wine route, run by the Cazes family of the adjacent Lynch-Bages. Since 1989, the family has been considered as the “pioneer in wine tourism”, expanding the scope of their operations by offering worldwide visitors an original experience that incorporates modern art exhibitions, bespoke wine tasting and wine making, fine dining and accomodation.

What is your greatest inspiration?
My absolute passion is working with fish and vegetables. From the depth of flavour to the sheer variety, I find my biggest challenges and achievements working with these produces. I spent my first year at Cordeillan-Bages meeting with local producers to discover their gastronomic treasures. This led me to create the Équilibre menu, inspired by the Indian wellness philosophy of Ayurveda. White fish; green and raw vegetables; curcuma and ginger; and the natural antioxidants of pomegranate, the menu features fresh seasonal, well balanced produces that are not only elegant but also healthy.

Without any hesitation I can say Alinea, the three Michelin star restaurant by Chef Grant Achatz in Chicago. In an all-white abode, Ariana By Safi is comfortable in the surroundings of the busy Banjara Hills neighbourhood. Habibullah Safi of the Afghan Safis came to Hyderabad and opened Ariana which pays homage to the cuisine he’s loved and wants the city to as well.
During the day it’s a little low-key but in the evenings, the space takes on a whole new character. At the moment, there’s not much to be said about the interiors except for the al fresco dining under a bamboo mushroom-like structure. Offering both continental and Afghan cuisine, Ariana By Safi wants to offer diners the best of both worlds because a real meal is one where you lounge about and really savour the flavours.
To start off a bowl of mutton bone shorba is placed before us, its fragrance just mouth-watering and the taste is no different. The restaurateurs tell us, “We’ve been told it’s addicting!” and they were right; there’s an unusually lightweight feel to the shorba. Being anti-soup, I didn’t find it difficult to finish this off.
Simplicity is the key to Afghan cuisine despite its numerous influences from Persian, Indian, Chinese and Mediterranean cultures. Onions and tomatoes play large roles and meat in the quotidian spread.
Ariana By Safi has already found a special place in the hearts and stomachs of vegetarians in Hyderabad, largely because of the impressive taste that comes with such simple dishes. The team at Ariana By Safi know how to celebrate ingredients, how ever many they use. A prime example of this is the banjan borani , a delicacy of eggplant layered with tomatoes, yoghurt and onions. First we eyed this with scepticism but once we had one bite, we couldn’t stop.
Moving onto the chicken wings, we gobble these up with the team telling us there’s literally no added spices, it’s the salt and the chicken’s own flavour. Cooked to a succulent crisp, don’t miss out on these.
The kebabs which follow are flavourful and leave a happy and warm feeling in your belly without that heady sickness one tends to feel after an avalanche of meats. One that retains a special place in my palate is the platter of mutton chopan (chops) which I’m sure the lamb itself would be happy with.
If you have room, the main course is enjoyable but not to the level of excellence of the kebabs. Think saffron rice and Afghanistan’s equivalent of rajma.
Afghan cuisine may have some people in the city desiring more spice, more adventure, more lots-of-things…. but Ariana By Safi teaches you less can be more.
