I was honestly surprised by how much I ended up loving it here. I tagged along when my parents moved here because I was right on the cusp of adulthood but still felt like a kid and wasn’t ready to be on my own yet. I love that it doesn’t matter where you’re from, what you do, how much money you make, or what kind of car you drive — no one here will ever question whether or not you belong in this town. I love that in over a decade of being here, I’ve never walked into a bar, taken a look around the room at the crowd, and thought, “I don’t fit in here.” I love that it snows rarely enough that we can enjoy it. I love that despite living in the 4th largest city in the country, I can afford to live less than 5 miles from downtown without roommates. I love that any kind of food I’ve ever wanted to try, I’ve found it here. I love that our Chinatown, though admittedly ugly as hell, is a whopping 6 square miles of pure deliciousness and that I can try a new place there every week and still not even make a dent. I love that when I occasionally get sick of Chinatown I can head over to Hillcroft and binge on amazing Indian food and sweets. I love that when I get sick of both Chinese and Indian food, I can always find bomb-ass street tacos or upscale delicious authentic Mexican cuisine. I love that when I get sick of Chinese, Indian, and Mexican food there’s like 15 million other options to choose from because we live in the most diverse city in the country and it’s reflected so well in our food. On a somewhat food-related note, I love that I can cure my bubble tea cravings at 2 AM if I am so inclined. I love that this is the only American city I’ve been to in which I can get a decent Margarita (*gives Phoenix and LA the stink-eye*). I honestly even love the heat; there’s nothing like spending a winter in Minnesota to make a person appreciate just how good we have it here even if we all do have to endure a little pit stain once in awhile. Lentils 101 – The Basics
About Lentils Lentils are in the legume family. They are actually pulses, which are the edible seeds that grow in pods containing only one or two seeds per pod. They are believed to have originated in central Asia, and have been eaten since prehistoric times. They are one of the first foods be cultivated. Lentil seeds dating back 8000 years have been found at archeological sites in the Middle East. Today, most lentils are grown in India, Turkey, Canada, China and Syria. There are many varieties with the most common types in American grocery stores being brown, green and red (but actually more orange in color). There are also yellow, black, and puy lentils.
The brown lentils are the variety most commonly found in American grocery stores. They have a mild, earthy flavor, and hold their shape well when cooked. Brown lentils are “universal” in the lentil family as they can be used in whatever recipe that calls for lentils. They can be mashed and used in meatless burgers, blended into soups, used in salads, and used in casseroles and literally any recipe calling for lentils. They pair well with grains.
Green lentils have a bit of a peppery flavor. This makes them particularly suitable to add to salads or any dish where a pepper flavor is welcome. They take a little longer to cook then the brown variety, but still hold their shape well while maintaining a little firmness. This type of lentil is not as commonly found in American stores as the brown lentils, and can be a little more costly.
Red lentils have a sweet, nutty flavor. They cook up faster than other varieties because they are actually split and the seed coat has been removed. This makes them soft and mushy when cooked, making them a natural thickening agent for soups, purees, and stews.
Yellow lentils are split like red lentils. They have a sweet-nutty flavor, like their red counterpart. Since they are split, they also cook up quicker than brown or green lentils, in 15 or 20 minutes. Yellow lentils are commonly used in Indian cuisine.
Black lentils are also called beluga lentils. These are the most flavorful lentils. They have a somewhat thicker skin than brown lentils, so if you want them tender, they may need to cook a little longer like the green lentils, perhaps up to 40 minutes. If you want to maintain some of their crispness, cook them for less time, about 30 minutes.
Puy (pronounced pwee) lentils come from the French region of Le Puy. They look like green lentils, but are smaller and have a peppery flavor.
Nutrition Tidbits Lentils are an excellent source of molybdenum and folate, and a very good source of dietary fiber, copper, phosphorus and manganese. Also, they are a good source of iron, protein, Vitamin B1, pantothenic acid, zinc, potassium and Vitamin B6. Lentils contain no fat. One cup of cooked lentils provides about 1/3 of our daily protein needs (18 grams) and 230 calories.
Lentils are a good source of both soluble and insoluble fiber. The soluble fiber helps to keep our cholesterol in check (by binding with bile in the digestive tract, removing it from the body and forcing the body to use cholesterol in the system to make more bile). The insoluble fiber in lentils helps to prevent constipation while reducing the risk of irritable bowel syndrome and diverticulosis.
The fiber in lentils not only helps to regulate cholesterol levels, but also regulates blood sugar. This helps in controlling diabetes, insulin resistance and hypoglycemia. Research has confirmed that eating lentils as part of a high fiber diet helps to release energy slowly and steadily, showing dramatic effects in diabetics by controlling blood sugar and lowering cholesterol levels.
The fiber content, combined with its folate and magnesium content, works wonders in helping to lower the risk of heart disease by lowering homocysteine levels and improving blood flow around the body. Homocysteine is an important amino acid needed in certain metabolic reactions. When our folate level is low, homocysteine levels increase, causing damage to arterial walls and raising our risk for heart disease.
Lentils are also a good source of iron, with one cup of cooked lentils providing over a third of our daily needs. Iron is critical for carrying oxygen throughout the body in the bloodstream. Eating lentils on a regular basis can help keep our energy levels up and prevent iron deficiency.
How to Select Lentils Most lentils available today are either found in bulk bins or are prepackaged. When buying lentils, make sure there is no sign of moisture or insect damage. Look for ones that are whole and not cracked.
How to Store Lentils Store lentils in an airtight container in a dry, cool, dark place. They should keep for about a year.
How to Preserve Lentils Once cooked, lentils will keep in the refrigerator for about one week. Cooked lentils can be frozen and should be used within three months.
How to Prepare Lentils Compared to other beans or legumes, lentils are very easy to prepare since they need no presoaking. Before cooking them, check them for stones or debris and remove anything as needed. Place the dry lentils in a strainer and rinse them under cold water, then cook as desired.
How to Cook Lentils When boiling lentils, use one part lentils to three parts water. It is not mandatory, but bringing the water to a boil first before placing the lentils in the water helps to make them more digestible. When the water returns to a boil, turn down the heat and simmer, covered, for about 30 minutes until tender. Brown lentils usually take about 30 minutes to cook. Red lentils take about 20 minutes, and black lentils may take up to 45 minutes to cook. Some recipes call for slightly more firm lentils, requiring a little less cooking time, while other recipes call for very soft lentils, requiring a little more cooking time.
Some suggested ways to use lentils: * Try mixing lentils with rice or another grain. The combination will make a complete and very digestible protein. Vegetables can be added to make a simple meal. Suggested vegetables include dark leafy greens like kale or spinach, or crunch vegetables like carrots or bell peppers.
* Add cooked lentils to stir-fries or casseroles.
* Use pureed cooked lentils in hummus.
* Cook lentils in your favorite broth to add more flavor to them. Add some herbs to flavor them to your liking.
* Add lentils to soups and stews for a protein boost.
* Use lentils in a curry served over rice.
* Serve chili-spiced lentils with cheese and nacho chips or use them as a taco filling.
* Stuff sweet potatoes with your favorite cooked lentils. Top with cheese.
* Try a creamy red lentil soup.
* Try a lentil salad. Many can be served warm, room temperature or cold…a perfect addition to a summer gathering (or any time for that matter!).

I recently read an article by Mary Beth Sheridan of the Washington Post about Americans migrating to Mexico. Snookumses, that’s a switch, isn’t it? Mexico’s statistics institute estimates that the U.S.-born population in Mexico is now approximately 799,000. The U.S. Embassy in Mexico City estimates it’s closer to 1.5 million. This is more than a four-fold increase since 1990. As a result of this migration, pickle ball had its first annual tournament this year in San Miguel de Allende. Oh, these unintended consequences. Pumpkins, who would’ve dreamed that San Miguel would become a 55+ community.
Just as Texans love Santa Fe, Santa Feans love Mexico. I don’t know what percentage of that 800,000-1.5 million would be from Santa Fe, but I do know that it would include Realtors. In 1996, Victoria Ryan (formerly with City Different Realty) moved to Pátzcuaro, Michoacán, where she is an artist and the proprietor of a charming Inn, La Casa Encantada. On the Pacific side of the Baja, Victoria Warner Shepard ’s surfer son, Eric Warner , chose the village of Todos Santos, primarily because it’s a little north of the beaches of San Pedrito and Los Cerritos, famous for their strong surf.
San Miguel de Allende seems to be the ex-pats’ most popular city. Judy Arnold (also from City Different Realty) moved there and started San Miguel Rentals in the late ‘90s. Sadly, I must report that Judy had a stroke a few years ago and died on April 24th at 84. Jeanne Edmunds Humphrey moved to SMA with her husband, “Hump” (John Humphrey Sr.) and their golden retriever in the early 2000’s. Wanda Dawley (formerly with Santa Fe Properties) moved to SMA to play bridge and have a place for Candy Brenton (marketing consultant) to stay when she visits.
Other crazy bridge players chose Puerto Vallarta. John Jacobson (attorney and owner of the now-defunct Santa Fe Futures Realty) made his 2nd home his primary residence when he retired there last year. Leslie Brodsky went to PV for a bridge tournament in 2016 and never returned except to get her dogs and a few items of clothing.
Linda Bissonnette (Sotheby’s) and her dog, Mickey, moved to Ajijic, Jalisco, where she joined Lake Chapala Real Estate. Being a water baby, she likes the sound of her marketing tag “Linda Sells Lakeside” better than something like “Linda Sells Solar.” Cariñas, she also loves referrals, so keep that in mind. Susan and Terry Munroe (Santa Fe Properties) wanted a break from real estate, so they rented a hacienda in Ajijic for a year or two and use it as their home base while they travel.
Bebés, thinking of all these ex-pats made me want to jump on a plane and head down there. But I couldn’t. That’s what happens when you have a dog who likes three meals a day and sleeps late…it’s high maintenance. Additionally, I didn’t want to miss this year’s Eldorado Studio Tour.
Each year it gets better, it seems, just as Eldorado does. I remember when AMREP bought the Alva Simpson Ranch in 1970. Back then it was just a whole lot of land stretching on seemingly forever. Today Eldorado is the largest unincorporated community in New Mexico and boasts one of the west’s largest solar communities. Possums, no longer does one have to drive into Santa Fe for supplies, because today there are two shopping centers with everything you need. (Walmart and Amazon combined.)
In addition to these First World amenities, Eldorado has become a budding artist colony, proof of which could be seen last month at the studio tour. This year’s event led the pack of spring studio tours with the largest number of artist and artisan participants in New Mexico. That’s what I’m talkin’ about, Cupcakes. Eldorado has come into its own.
My good friends Walter Cooper (artist, author, and very tall) and his partner, Doug Bland (retired chair of NM Bureau of Geology & Mineral Resources, avid gardener, and very athletic) built a house in Eldo thirty years ago (pace setters always). Walter’s studio was on the tour this year, and I wanted one of his latest shadow boxes. With 107 other artists displaying and selling their work, you can understand that I didn’t stop just at Walter’s studio (fortunately, my car has a large trunk). All in all, petunias, it was a beautiful day in the neighborhood.
Mexico may have to wait, I realized, until next fall. But cheer up, I scolded myself. In April, I could’ve been in Mexico when I went to an Española Animal Shelter fundraiser held in Abigail Davidson’s (Sotheby’s) listing in Las Campanas. Abigail’s clients loved Mexico so much that they took their architect to five different cities in Mexico to show her what was important to them when she designed their 8 Wildhorse home. Chicas, their architect may have exceeded their expectations. Stepping into the courtyard that day in April was as good as entering a glamorous hacienda in San Miguel.
The next best thing was the food. Kittens, not only is Abbie clever and creative at marketing, she’s brilliant at choosing a mate. Her life partner is Paddy Rawal , chef and owner of Raaga-Go , his gourmet Indian Takeaway tucked between the Pink and Rio Chama. Santa Feans almost had a breakdown when Paddy closed Raaga in the fall of 2017. They got off their antidepressants only when he opened his gourmet raaga-to-go. So there I was at Abbie’s listing, my eyes feasting on the architecture while I feasted on Paddy’s authentic Indian cuisine, and I was pretty sure that life wouldn’t get any better..
Gulp. It might not. Possums, now that Abbie doesn’t have anymore fundraisers planned at 8 Wildhorse (the last event was in May, Santa Fe Symphony’s “Musicale”), and I can’t afford to fly to Mexico because I spent too much of my disposable income at the Eldorado Studio Tour, is that all there is?
Oh thank god, no! This month, on June 14, I’ll be at the SFAR’s 6th Annual Golf Tournament at Towa Golf Club. Don’t worry, Golfers, I won’t be competing (ha, ha, ha). I’ll be there for the “After Party,” which is from 3:30 until 7:30. Deb Bodelson (Santa Fe Props and Chair of the SFAR Community Services Committee) assures me it will rock. AND the proceeds from this whole event go to the Alzheimer’s Association. Another thank god—I can have a guilt free time knowing my money will be spent wisely.

Restaurateur Jaspal Inder Singh Kalra – popularly called Jiggs Kalra – who was known as the czar of Indian cuisine, died in Mumbai on Tuesday morning. Although there is no official confirmation from his family, several people paid tributes to the pioneering food columnist on Twitter.
Kalra was unwell for quite some time. He spent his 72nd birthday on May 21 in a hospital, his son Zorawar Kalra had said, reported Mid-day .
Kalra started off as a food columnist and went on to become a food consultant in the 1980s. He also authored over 11 books on Indian cuisine, including Prashad , which is considered “the bible for chefs”.
Kalra played an important role in introducing Indian cuisine to an international audience. He had served several dignitaries, including Princess Diana, Prince Charles, Atal Bihari Vajpayee and Bill Clinton.
Kalra was the first Asian to be inducted in the International Food and Beverage Gourmet Hall of Fame. He was also the first to conceptualise and host an Indian food-based television series. He was behind the launch of restaurants like Masala Library by Jiggs Kalra, Made in Punjab, Farzi Café and Pa Pa Ya.

As you travel along the Rivers of America, past Critter Country and New Orleans Square, you’ll find a land of legends, discoveries, bravery and exploration. This is a land of pioneers, a land we know as:
Frontierland
Themed to the American Old West of the 19th Century, Frontierland is home to cowboys and pioneers, saloons, red rock buttes and gold rushes. It is one of the original five themed lands at Disneyland and although it has showed that there aren’t any significant problems when a castle park opens without one, it is often home to a few of the park’s most memorable rides or experiences. Originally Frontierland was not going to feature many attractions at all, but was primarily going to feature open expanses of nature and wilderness trails. However, Guests could choose from a list of options to traverse Frontierland via stagecoach, pack mules, Conestoga wagon or the later opened Mine Train Thru Nature’s Wonderland. The latter closed in 1977 to make way for a new e-ticket attraction, Big Thunder Mountain Railroad, which has become a Disney classic and is present at Disneyland, Walt Disney World, Tokyo Disney Resort and Disneyland Resort Paris. From the Hub of the park, you’ll easily spot Frontierland, marked by its Ponderosa Pine Log Pioneer Fortress standing tall and with pride. Past this fort lies the world and setting of pioneer days in the American frontier, not the word frontier as an actual border, but the line that brave explorers pushed away as they dared to explore the American continent.

Frontierland is a tribute to the faith, the courage and ingenuity of the pioneers who blazed the trails across America.’’ ​
As we enter Frontierland, we are welcomed to Rainbow Ridge. Now, although some Frontierlands don’t use the overarching story route for the land, I feel like the way in which for example Paris and Hong Kong create a connected universe for their Frontierlands is dynamic and interesting. That’s why you might notice that every Frontierland at any castle park yet to come will take place in a different town with a different story, also varying rides. Rainbow Ridge is a small mining town established in the 1860s. It was founded quickly after the discovery of some of Nature’s most bizarre monuments, in particular, the Rainbow Caverns, after which the town has found its name. These natural wonders were found during a mining expedition which was supposed to lead to the gold mines of the area, but these were however never discovered. The town boomed by giving tours around the area, granting itself the title of ‘’The Biggest Little Boom Town in the West’’ with its population peaking at 2,015 people, but the almost maniacal gold rush wasn’t stopped, thus many brave townspeople still kept on looking for the legendary Gold Mines, often leading to misfortune. This caused the area to become plagued by supernatural incidents leading to less visitors to come and see the natural wonders and a decreasing population number, going down to 38.
​ Although in reality, The Mine Train Thru Nature’s Wonderland was demolished to make way for the Big Thunder Mountain Railroad coaster, in this reality it is still open, yet it is a different version from the original one that closed. Originally Guests boarded a miniature train and were transported through the various scenery of the desert environment, which featured anthropomorphic cacti, the Balancing Rocks and the beautiful Rainbow Caverns. Besides these scenes, Marc Davis’ revamp of the ride added a bunch of new ones to the experience, such as Cascade Peak, Bear Country, Beaver Valley, the Living Desert and Devil’s Paint Pots, featuring over 200 replicas of North American animals. In 1977, it was decided that the park needed more thrill rides and so the Mine Train closed to undergo its major redesign. Two years later, the ride re-opened under the same name and was now a thrilling adventure along Frontierland’s wilderness route as you pass by legendary locations and wonderful wildlife in their natural habitats. During the ride, Guests are recruited to board the mine train carts in search of the legendary and never found gold mines, but are surprised by the supernatural leading to failure on your mission, but nevertheless offering great views of the land’s setting.
​ Although some scenes of the original Mine Train Through Nature’s Wonderland ride were lost after its redesign, many re-appeared in another family attraction, Rainbow Ridge Stagecoach Expedition , a journey through the wilderness recreating the experiences pioneers had aboard the original Conestoga wagons in the Western United States. This indoor and outdoor experience features a form of the EMV system which can be found in other attractions like Indiana Jones Adventure and Dinosaur, simulating the feeling of rushing over rough land and abruptly avoiding dangers along your way. As you pass by landmarks such as Coyote Rock, Elephant Rock, Inscription Rock, Horse Thief Canyon Dead Man’s Spring, Natural Bridge and Indian Territory, your vehicle enters and exits multiple set buildings in which you’ll pass through show scenes telling the story of a group of banditos trying to find the legendary Gold Mines of Rainbow Ridge, but end up in a series of misadventures, including a bear attack and the explosives of old mining dynamite.
​ Besides offering these two bigger experiences, Frontierland is also home to a small list of other fun activities which should not be missed. One of these smaller experiences is the Frontierland Shootin’ Exposition , which originally opened with the park as the Frontierland Arcade. Take aim and fire at nearly 100 targets during an old-time Wild West shootout. Hoist a replica .54-caliber Hawkins buffalo rifle to your shoulder and peer through the scope to see legendary Boot Hill in Tombstone, Arizona – a notorious Old West town. When you hit one of many detailed targets, both moving as stationary, you’ll be rewarded with entertaining effects, some with a supernatural twist.
In the earliest plans for the originally planned Mickey Mouse Park in Burbank, a Mississippi steamboat was included and was supposed to offer scenic views and transport across the lake. Although the Mickey Mouse Park was never built, the idea of having a riverboat attraction survived the selection of ideas for Disneyland. For the first time in fifty years, a functional paddlewheeler would be built in the United States, thus needing lots of extensive research into steamboats that were built in the heyday of steam powered ships. As you board this majestic 19th Century paddle boat known as the Mark Twain Riverboat , you get ready for a sightseeing tour along the scenic Rivers of America. During the charming trip, you’ll spot delightful sights along the river’s edge including an idyllic Native American village, sparkling waterfalls and more. The 28-foot tall, 105-foot-long riverboat is comprised of 4 pristine decks, awaiting to be explored by Guests. These include the Pilothouse, the Promenade Deck, the Texas Deck and the Main Deck. An alternative way to venture the rivers of America is by boarding Davy Crockett’s Explorer Canoes . Paddle down the Rivers of America on a grand oar-venture. Named after the legendary 19th Century icon, Davy Crockett, this attraction takes Guests back to the time when water was the way to go. As you cruise full-circle around the Rivers of America, charming surprises await you around every bend, particularly, when the canoes pass over a stream, solely for the attraction itself. Along this stream, you’ll come face to face with Davy Crockett’s campsite as he sings his jolly theme song.
​ Frontierland also offers a variety of fare. For quick-service options, guests may grab some food or refreshment at The Golden Horseshoe , legendary locale – enjoy delish dishes, ice cream desserts and live music on the side, or the Stage Door Café , a quick-service saloon for hearty vittles like hand-dipped corn dogs, a chicken-fried steak sandwich or our grilled chicken spinach wrap. Rancho del Zocalo Restaurant is where you’ll round up all your amigos and head to the hacienda for classic Mexican cuisine on a bonita bougainvillea-shaded patio. Or decide to savor the flavor of down-home cooking when you dine on delicious dishes sprinkled with a dash of Southern hospitality at River Belle Terrace . For shopping, go to Bonanza Outfitters , where you’ll find a wide variety of Frontier themed items. Wheel your wagon over to the Westward Ho Trading Company where pins are WANTED!
