We are travelling to Singapore for a four-day trip this month, and have two kids aged 5 and 8 years. We will be staying at the Sentosa Island . Please suggest a suitable itinerary and an exotic seafood restaurant? If you intend to do a four-day trip, then you can stay in Sentosa Island for two nights and spend the other two in Singapore. Since you are travelling with kids, Sentosa Island offers a wide range of attractions like the Universal Studios, Adventure Cove, Madame Tussauds, Butterfly Park, Insect Kingdom and many more. In Singapore, Jurong Bird Park, Singapore River Safari, Marina Bay Sands Sky Park and the Spectra laser show are some of the major attractions for sightseeing and amusement. You can check out the ‘Singapore Seafood Republic’ restaurant which is quite popular for its specialized exotic seafood servings.
I am planning a trip to Thailand this month, with my kids who are 13 and 9 years old. Can you please suggest the best places along with recommendation for vegetarian restaurants? Places of prime attraction include Bangkok, Pattaya, Phuket, Krabi, Chiang Mai etc. that require minimum two nights each for a fulfilling experience. This can include island visits to ‘Phi Phi’, ‘James Bond’, ‘4 islands’, etc. Besides you can also visit animal and marine life amusement parks like ‘Safari World’ and ‘Marine Park’. At Phuket, kids can enjoy the ‘Phuket FantaSea’ show and the ‘Siam Niramit Theatre’ during evenings. Most of these cities offer great shopping experiences which you should not miss. Vegetarian food is available everywhere however Indian cuisine may not be available everywhere.
My son is travelling to Australia for his undergraduate programme and I would like to pack some dehydrated home cooked food. Do u think I can send it with him? In my opinion Pandara road is famous for special butter chicken ,barrah kebabs, chicken tikka,dal makhani and the North Indian and Mughlai uisines dominate the food scene there, there are also some serving Indian-Chinese and Pan-Asian fare. Here’s our list of popular eateries in Pandara Road for a fitting meal –
1. Gulati – it has range of North Indian, Mughlai and Tandoori delicacies. They also have a separate vegetarian restaurant in the vicinity called Veg Gulati.
2. Chor Bizzare – Specialising in North Indian cuisine with a soft corner for Kashmiri dishes.
3. Pindi – it has been serving Mughlai, Indian and Chinese food since decades. It is Tandoori specialties and seafood to spring rolls andmanchurian. Must-have dishes include seekh kebab, fish tikka,and keema kaleji among others.

Breakfast in Kerala

This was no ordinary breakfast! I will never forget this fantastic experience.
Every now and then, I get to experience a meal that is so amazing it stays with me forever. On my recent work/holiday to Kerala, my wife Caroline and I got to do just that. My friend Jomon Keriakose, Chef de Cuisine at the brilliant Lalit London just happened to be visiting family while we were there and he arranged for us to meet his friend Shihabudeen VM and his family at their home in Arookutty, a beautiful suburb of Kochi.

Have you ever been invited to someone’s home for a meal and then been blown away but the work they put into it? They must have worked for hours creating that masterpiece of a meal! We appreciated it so much and every bite brought something new and wonderful. This was food perfection.
When we arrived, Shihabudeen showed us around the grounds outside. This too was an experience that any Indian food fan would love.
What I could do with these! Curry leaves being grown in the garden. The aroma was amazing.

Shihabudeen pulled a fruit from his nutmeg tree and split it open. I wanted to show you this as it was the first time I had seen nutmeg this fresh. The brown bit in the centre is the nutmeg and the red bit that is wrapped around it is mace. Both are dried before using. Then there was the fruit that incased the nutmeg and seed. We tried some and it’s really good. This fruit is used a lot to make pickles.
Then came that fantastic meal which included no fewer than twelve different dishes. If that were the only meal we had in Kerala, we would have still gone away happy. Shihabudeen very kindly gave me a few of his recipes. You have to try his aleesa which is a chicken and wheat dish enjoyed year round but it is especially popular at Ramadan. I shared the recipe for you here. It will be in my fifth book “The Curry Guy Bible” that is out in December 2020. He also gave me the recipe for a chicken and rice dumpling curry that was out of this world gorgeous. I’ve made it too but haven’t typed the recipe yet. That recipe will be on my blog soon so WATCH THIS SPACE!
After that fantastic meal, it was time to move. Shihabudeen planned a canoe trip for us all in the backwaters of Kochi. To do this, we had to get an old ferry to the other side of one of the waterways which was a fun experience in itself. It was a scorching hot day so umbrellas were essential out there on the water. We travelled out to a group of islands and docked up on one of the islands which is now a yoga retreat where we relaxed for about an hour in the sun and were served some delicious fruit drinks that were made there. We don’t do yoga but I could see Caroline and me staying there for a few days. No internet, no phones, just quiet relaxation.
Then we travelled around a few other islands where we saw what used to be spectacular holiday retreat hotels but are now abandoned. Times change and these remote islands are just a bit too difficult to get to to make them viable as a holiday destination. Still, we could see why someone took that business gamble as these islands were beautiful.
On out way back to the car, we happened by a fisherman who was catching and selling fish. Shihabudeen purchased a few pearl spot for his family’s dinner. If you ever get to Kerala, that is a fish you need to try.

VERO BEACH – Vero’s Top Chef Challenge Finale 2019 to benefit The Hope for Families Center was held Monday night at the prestigious Bent Pine Golf Club. Over 150 diners and socialite’s enjoyed a 5-course meal prepared by the four chef finalists.
The Hope for Families Center has been helping homeless families for over 28 years and assists an average of 250 families a year stabilize and find permanent housing.
Executive director Dr. Diana Grossi explained, “The first thing we do is get the children into school or daycare and make sure the parents are employed. Once they have stable employment, they are required to save 70 percent of their net income to put towards permanent housing. We work with Treasure Coast Homeless Services, through their rapid rehousing program, to get them housed and we follow their progress for about six months. The program may assist them with a down payment, or first and last month’s rent, or utilities. We are basically just giving them a boost or a head start on their own self-sufficiency.”
The four chefs and their dishes for the finale were: Chef Alfredo Arce of The Wave Kitchen & Bar at Costa d’este Pan Roasted Red Snapper, Rock Shrimp, Truffle Butter, Parsnip Puree, Parsnip Crisps. Chef Eddie Hunter with Cuisine Machine Oven Roasted Crazy Hart Ranch Chicken, Coconut Rice and Peas, Curry Veloute, Purple Bok Choy Slaw, Nordic Acres Farm Daikon Micro Greens. Chef Travis Beckett with Wild Thyme Catering Authentic Japanese Ramen with Sesame and Soy Marinated Pork Tenderloin. Chef Chuck Arnold of Fire & Wine Red Wine Braised Beef Shortrib with Smoked Honey Truffle Glazed Butternut Squash Puree, Roasted Chipolinni Onion and Baby Carrot.
Each one of these dishes was executed very well with a great balance of flavor and portrayed the talent of each one of these chefs.
Sebastian Daily was granted VIP access to the kitchen, and I must say that the camaraderie inside the kitchen from each chefs team was phenomenal. We are so lucky to a part of this top-notch culinary community. Vero’s Top Chef 2019 chosen by the judges was Chef Alfredo Arce of the Wave Kitchen & Bar at Costa d’este. The People’s Choice Award selected by the diners was Chef Chuck Arnold of Fire & Wine. Both dishes were superb and certainly my two favorites.
Chef Alfredo’s snapper was roasted to perfection; it wasn’t overly seasoned allowing for the full flavor of the fish on the palette. The truffle butter left a smooth texture to the shrimp, and the parsnip puree was creamy, sweet and could almost be described as a vegetable Alfredo.
Hope for Families explains, “Costa d’Este Beach Resort & Spa’s Alfredo Arce stumbled upon his passion for the culinary world by accident. The Mexican-born chef, who now assumes the #2 role in the kitchen for one of Vero Beach’s most acclaimed resorts and its restaurant The Wave Kitchen & Bar, launched his hospitality journey working in Costa’s housekeeping department. Arce’s professional drive and ambition along with the birth of his now seven-year-old son inspired him to identify a new path that would challenge him to learn and grow cooking. So now, you don’t have to hightail it Bora Bora to get the world’s best bungalows. They are a lot closer at Sandals .
Sandals has 19 total resorts in the Caribbean (including their family -friendly, all-inclusive, Beaches Resorts ) and when you’re staying at the Montego Bay property, you can also hop over to the Sandals Royal Caribbean next door, as well as the nearby Sandals Inn, to take advantage of their superb sands, cuisine, and much more. It’s called the “Stay at one, play at three” program, and a shuttle provides a quick ride between the properties every 45 minutes.

Staying here is like being on a luxury cruise ship, where you stash your wallet in the safe and forget about it. Yet at Sandals resorts , you have the added advantage of land-based access to the beach 24/7. Just get up in the morning, put on your bathing suit, and hit the beach – and the beachside, barefoot-allowed, restaurants and bars. Plus there’s a no-tipping policy (except for your butlers). With all of this, it’s no wonder, then, that “We earn multiple wows per day,” says Mr. Stewart.
One of the little things that impressed us – and I’m not easy to impress – was that the in-room amenities by in-house brand Red Lane are all sulfate-free. That means no harmful additives in your shampoo and conditioner. My stressed strands were thankful, and it was one of those tiny things, and great attention to detail, that added up for a superb stay.
Ah! Spa! And Cuisine!
The spa itself, Red Lane, is another winner. “We look at our spa menu like a chef looks at a culinary menu, says David Erlich, the Corporate Director of all the Sandals spas. “We look at our environments, and our menus are unique, with a lot of tropical curation.” Indeed, I enjoyed a deeply relaxing facial with Red Lane products that including a cleansing milk and oil application, exfoliation with a papaya pineapple enzyme mask, an antioxidant firming mask, Vitamin C serum, deep pore cleaning, plus an illuminating serum. I emerged lightened, brightened, and tightened!
As far as the cuisine goes, we were extremely pleased with the high-end restaurants and the variety and quality of food available. I interviewed Paul Bauer, the Group Manager of Food Beverage Standards, and he emphasized and underscored just how important cuisine is to the Sandals group as a whole. “We are always pushing the envelope…We have to ensure that our standards are in place from hotel to hotel. Modern all-inclusives have to up their game, and we pay attention.”
For example, you can dine – with no added upcharge – at Butch’s Steak and Seafood, where you can enjoy first-class lobster, shrimp and other delectable, as part of the all-inclusive package. By comparison, such a dinner-for-two at a non-inclusive resort would cost around $250, while a cruise ship would most certainly charge you an added $35 fee. And, for a little more wow factor, here’s something else: When you are wearing your little black dress, the staff will exchange your white napkin for one in black, faster than you can say, “Chanel,” so that your outfit doesn’t get covered in lint. Pauline Ngarmpring is the first transgender candidate ever to run for Thailand’s parliament. The 52-year-old, a beacon of hope for the LGBT people, tells DW about her entry into politics and what she intends to achieve.
On March 24, Thai voters will elect a new parliament, which is set to end five years of direct military rule. 52-year-old Pauline Ngarmpring, a transgender candidate, is contesting the polls and representing the Mahachon Party. In fact, Ngarmpring is one of three candidates put forward by the party for the post of prime minister. She is, however, not considered a front-runner.
In a DW interview, Ngarmpring says she wants to bring hope to the marginalized and create political space for future generations of LGBT people.

DW: Compared to other Asian countries, Thailand is viewed as having a more open approach toward the LGBT community. What’s your take on this?
Pauline Ngarmpring: People around the world think that Thailand is a sort of paradise for LGBT people but in reality it is so difficult for people to come out of the closet. I went to the United States to transition because in Thailand they would have looked at me as if I was a freak.
Prior to my transition, as a man, I was a CEO and sports promoter, well known in the world of Thai football. I was afraid that people on the street would recognize me and I would be embarrassed. That’s why I left for the US, to get away from Thai society.
But eventually you came back to Thailand.
Only because the media found me. At the time, I just wanted to keep a low profile and disappear. I didn’t think people would recognize the new me. But then, in July 2017, a media outlet ran a big story on my transition in America. That was when I decided to go back to Thailand, to explain my story to society and to tell it from my point of view. I wanted to encourage people and give them the strength to be themselves.

What were the reactions to your transition after you returned to Thailand?
I knew I was going to be under a lot of pressure. Some people laughed at me and made fun of me. But when you respect yourself enough, you don’t really care about all the negativity. The more I talked about it, the more understanding people became.
I suffered a lot in my life but I am proud about where I am now. After I came out publically, people started sending me messages, saying that I inspired them to transition and that made me happy. Of course, sometimes I get comments like “You used to be a good-looking man” but people respect me now as Pauline.
Why did you choose to pursue a career in politics?
Back in the past when I was a man, I was interested in politics because of my professional background in journalism. Then I worked in football which involved dealing with a lot of politicians. I closely followed the political situation in Thailand and it actually made me a bit depressed because it could be so much better.
Some parties invited me to join but I was not complete at the time. I had the mission to transform into a woman. After I became Pauline, I was invited to join the Mahachon Party and this time I was ready to enter politics because I was complete. I didn’t have to worry about anything because I was myself. But I never thought about becoming prime minister or anything, I just wanted to be beneficial for the people.

Thailand: LGBT inmates experience partial segregation in prison What do you hope to achieve politically for the LGBT community?
The Mahachon Party strongly supports human rights. So, one of the main things I would like to accomplish is to make people equal in the political sense. I would also strive to provide them with equal economic and social opportunities. That includes recognizing LGBT as human beings and giving them the same rights as everyone else, like being able to marry and properly identifying oneself.
Right now, for example, we cannot change our gender identity and that makes life very difficult. In hospitals, people call us “Mr. with woman identity,” that is so embarrassing. And the same problem occurs when you travel abroad with a passport still referring to you as “Mr.”.

Do you think you actually have a shot at becoming the next prime minister of Thailand?
Frankly speaking, I don’t have the chance to win this time. That’s partly because I joined the party only three months before the election. I hope we get six or seven seats in the parliament, which would already be a good start.
Something makes me confident though, that in the future I will get more time to prepare and to actually make people understand my concept. I believe I will be able to make them realize the advantage of having a transgender as prime minister. I would represent a more diverse group of people in society than a regular male or female candidate.
I am contesting the elections for the sake of future generations and seeking power is not my goal. Power is just a tool in this case. I just want people to be more open toward the LGBT community and, in a way, I have already achieved that.

What is your message to people who want to transition or to people who have already started to embark on that journey?
My key message for people around the world is: “Try to be yourself.” And even though people hate you or people don’t accept you, it doesn’t matter because the more you respect yourself, the more you love yourself. And the more you love other people, other people will love you back. Just be honest with yourself and your potential and then everything will be fine.
Imagine the media hadn’t published a big story on your transition and you hadn’t come back to Thailand to enter politics. What would you be doing now?
I was supposed to be a chef. In the US, I worked in the kitchen of a restaurant. It was very hard work but I love cooking. I didn’t want to be an executive in a company anymore, and that’s why I started to learn how to cook. I learnt how to prepare Thai food, Japanese and other international cuisine. So if I hadn’t entered politics, you would have found me in a kitchen now.
