Vegetarian or not, it all boils down to the macronutrient profile of diet. I will try to explain this with an example.
It is a well known fact that Pakistanis like their meat, so do we North East Indians. We eat meat for breakfast, lunch and dinner, loosely speaking.
But it matters much in the way people prepare their meat, whether their preparations are doused in oil and fat, paranthas soaked in oil. Side dishes are important too, fibre rich diet is desirable. Pakistanis prepare their chanay and saag as if they are substituting it for their fatty steak. Not the right way to go.
We stir fry or braise our meat with leafy greens and vegetables like other Asian countries do in minimal amount of oil, consume boiled, steamed or stewed foods. We easily eat more meat per person than the Pakistanis but we do it healthy.

Idli-dosas and Me!

When one of our neighbours tells me, ‘I l ve south Indian food,’ I groan silently and roll my eyes mentally. While it is a very broad hint for me to invite her (and her family) for lunch/dinner, which I am always happy to, but I am tired of the menu that I am expected to lay out. In fact, it has remained unchanged since my childhood when my mother used to entertain our neighbours — itali, dosa (d as in dumb), sambher , bada and chutney!
It is my pet fantasy to lay out a spread of poriyal , kootu , mor kuzhambu , sweet pachadi, rasam, payasam – in short everything except the ubiquitous idli-dosa-sambar-chutney .
Before the advent of satellite TV, with its cookery shows from various regions, DD just gave us a (over)dose of culture — Bharatnatyam, Garba, Bhangra and kathakali. Even today in fact, these channels continue churning out stereotyped images of various regions. And so we began associating these art forms to the respective states. Post 24×7 invasion of the TV of our homes, other things like food and dress from various parts of the country began catching our fancy. This in turn set off a new game of associations: south Indians eat idli-dosa and do Bhartanatyam (maybe as they eat?), Gujaratis eat dhokla, wear the sari with the pallu on the right shoulder and dance garba and so on and so forth.
Make no mistake. I am very proud of the fact that these snacks have become universal favourites along with such stuff as pijjha , burger and ‘ noodals’ . But the assumption that the we eat only these to the exclusion of everything else is what gets my goat. Does Italian food begin and end with pizza? Or for that matter, Punjabi cuisine is only ‘ chole bhature’ ?
Some even look at me disbelievingly when I tell them that I make sambar and rasam only occasionally and idli-dosa only if we are expecting guests or friends who like them. At home, it is poha/upma/dalia/oats for breakfast and roti-subzi-dal-chawal for meals. It is not just us, but most south Indians settled in the northern parts of the country have adopted this meal pattern. But you should see their expression when I say this. They look at me as if I was lying and trying to get out of giving them a treat.
One of my Delhi friends explained why the masala dosa is so popular in the north in comparison to other snacks. According to her it is the most north-Indian-of-south-Indian foods, if you know what I mean. ‘It is a complete meal to us – ‘The dosa is the equivalent of roti , the sambar is the dal and the potato filling is the subzi , with chutney to round it off’, she explained. Wow! I never thought about it like that, did you? So while it is a breakfast dish/evening ‘tiffin’ in the south, our north Indian brethren have it as a meal.
They make itali-dosa at home and try teaching me the nuances of grinding the batter! I listen to them with a smile – there is always something one can learn. I am happy and proud that it has become a part of their repertoire! As for adapting dishes to suit one’s tastes, that is welcome too, for that is how the popularity of a particular dish spreads, I guess. Haven’t we sufficiently Indianised the pizza and noodles? We get tandoori chicken pizza and Chinese bhel among other variations, if you please! Chinese Bhel!
Some of my friends actually like their version of the sambar and chutney and wrinkle their noses at the original stuff as they find it too ‘south Indian’! I can understand that since I am pretty sure that most of us would not be able to enjoy authentic Chinese noodles or maybe even the pizza.
Before north Indians take offence, let me hasten to add that the situation is not too different in the south. To them, north Indians only eat ‘ sukka roti’ (phulkas), chola- batura, samoosa, panneer, chenna ( chana ) and chat (pronounced as in ‘chat’ting. The other words have been spelt as they are generally pronounced in the south.
Just as the north Indians have adapted the art of making idli , dosa and sambar to suit their palates, south Indians have sufficiently southernised the matar paneer and other subzis. We once had a Tamil cook in Delhi who made a tadka of mustard, urad and chana dal (the standard tadka-triumvirate for SI cooking) for all the north Indian dishes including palak paneer and aloo matar . Needless to say, they all tasted like the good old poriyal or kootu !
This is not to say that all north Indians like the south Indian ‘foods’ and vice versa. There are those from both sides of the Vindhyas who can’t stand the sight of idli-dosas or the masala saturated north Indian foods as the case may be. But by and large, the these are favourites.
Today we can go so far as to say that the idli-dosa, matar-paneer, dhokla and roti-subzi are as much pan Indian foods as the salwar- kameez and kurta-pyjama are pan Indian dresses. No only that, even wedding rituals and festivals are assuming pan Indian identities. This however is increasingly a south-going-north affair.
Awareness is a two-way street though. For example, earlier wedding receptions followed religious rituals in Tamilian weddings. Today they follow the barat – varmala pattern of north Indian weddings. Then again, holi is increasingly becoming popular in the south. Conversely, the north Indians know about Ayyappan, the southern deity from the annual pooja celebrations that are held by Keralites in their neighbourhoods (and now due to the temple being dragged to court for not allowing women); they also know about Navratri kolu and so on.
One interesting aside here: While Tamilians, Telugus and Kannadigas get classified jointly as ‘south indians’, the Malayalis merit a separate category of ‘Keralites!!’ Wonder how? Are they more visible or do they observe and uphold their customs more conscientiously?
Coming back to food, Indian food is so varied that one can spend an entire lifetime learning the cuisines of the different states and still not skim the surface. While it is a wonderful thing to have pan-Indian foods, is it too much to ask that the names of dishes whether northern or southern – at least be pronounced properly and that they learn a little more about the dishes of other states, before assuming that the people of a particular region just eat so-and-so foods?
As I said at the beginning of this post, the next time someone tells me that he or she l ves south Indian food, I will invite them home promptly and cook exactly that — and enjoy seeing them going into catatonic shock…. before reviving them with fluffy idlis and crisp dosas and bucketsful of sambar !

5 Lucknow 49, Mayfair Lucknow 49, an Indian restaurant specialising in Lucknavi cuisine, opened just off Regent Street on 2 April. In the Northern Indian city of Lucknow, the galawati kawab can be found on every street corner, so Lucknow 49 founder Dhruv Mittal decided to introduce it to London. Originally invented as a special request by a toothless King of Lucknow, the extra-tender kawab will be a staple on Lucknow 49’s lunchtime menu. The dinner menu, designed by Dhruv alongside Executive Chef, Irfan Khan, features a choice of kawabs, including the beef galawati made with minced beef and over 50 dry spices. 7 Bubbledogs Champagne Bar, Fitzrovia Sandia Chang’s legendary bubbledogs restaurant – famed for champagne and hotdogs – closed on 24 March and will reopen on 30 April as a fully fledged champagne bar. The emphasis won’t be on those delicious dogs, but fear not, a refined selection of dogs will still be on the menu. There was nothing typical about last Sunday where about 1200 people in Dar es Salaam gathered to celebrate Holi, also known as the Festival of Colours.
It is a traditional Hindu festival which celebrates the victory of good over evil and the beginning of spring. It was an out-of-the-ordinary day for those who convened to play Holi.
People chased each other around the premises of Golden Tulip Hotel, the host of the holi party dubbed ColorFest, armed with packets of dry powdered paint and splattering random people from head to toe in colours of blue, pink, red, yellow, purple, orange, green, black and silver. It was a day of laughter, fun, celebrating diversity and unity. The idea was to come dressed in white and leave coloured.
Although the festival originates in India, it is widely celebrated in many countries all over the world, even in Dar es Salaam, Tanzania. Along with throwing coloured powder and paint, people come together to dance and sing, enjoy cultural performances and traditional Indian cuisine.
For many it was a first-time experience celebrating Holi while for others it was a ritual. Ms Sachak tells Life&Style that she has never seen anything like it in her life but it isn’t the first time she hears about the festival.
“I am aware about Holi through media and of course movies but it was my first time to ever be part of it. I came with a group of friends and family and we just had a good time. It was madness and fun. We forgot about all our stresses in life and just enjoyed celebrating it with strangers. I mean even a stranger became a friend, and that’s the true spirit of playing Holi,” says Ms Sachak.
But for Tasneem Mussaji it wasn’t the first time. Her roots are from India and Holi festival brought back nostalgic childhood memories. In an interview with Life&Style, Mrs Mussaji says, “Holi is one of the most colourful Indian festivals celebrated all over the world. Never in my dreams had I imagined celebrating this festival in Tanzania. Attending the Holi party last Sunday made me nostalgic of the time I celebrated it back home. The ambience, the music, and the people enjoying their time by throwing colours on one another was precisely how it’s celebrated in India, the only thing missing was the ‘dhol’ (a double-sided Indian drum).”
She adds, “During Holi, in India you find people running on the streets with colours in their hands and splattering random people with it from head to toe. You cannot find a single person who’s clean and not drenched with colour on that day. On this day even strangers become friends. My friends and I always gathered at a friend’s house or the community centre to play Holi before going on the roads to bombard strangers with colours. I am glad I attended the fest and relived those memories again.”
Traditionally, Holi is a spring festival and also an ancient Hindu Religious Festival celebrated in India annually. The festival signifies the arrival of spring, the end of winter, the blossoming of love, and for many a festive day to meet others, play and laugh, forget and forgive, and repair broken relationships. The festival also celebrates the beginning of a good spring harvest season.
One of the organisers who preferred anonymity tells Life&Style that Holi celebrations start on the night before Holi where people gather, perform religious rituals in front of the bonfire, and pray that their internal evil be destroyed in the fire. The next morning is celebrated as Rangwali (colourful) Holi – a free-for-all festival of colours, where people smear each other with colours and drench each other.
The vibrancy of colours is something that brings in a lot of positivity in our lives and Holi being the festival of colours is actually a day worth rejoicing. The festival of colours teaches humankind to transcend above the caste and creed. It is a festival to forget old grievances and meeting others with great warmth and high spirit.
The traditional and religious Holi Festival is held annually at the Temple Street, Kisutu in Dar-es-Salaam, where the bonfire is lit, prayers are offered and thereafter followed by smearing of colours to symbolise love, happiness and joy across all ages.
“With the above festival in mind, communities and entities such as Golden Tulip Hotel, Indian Culture Centre and this year many others such as Sunrise Beach Resort & Rotary have held the festival with various terms to it – From Holi Festival, Holi Bash, Rang Barse etc. These Festivals are not just limited to Dar-es-Salaam, but communities and entities celebrate in cities like Arusha and Mwanza as well,” the organiser adds.
Urban Vibes, a group of Holi enthusiasts conceptualised a unique approach to the colour festival by working hand in hand with communities such as Patel Samaj and now more recently with Golden Tulip Hotel in hosting this year’s ColorFest. Holi is typically held on the Sunday after the Traditional Holi Festival.
It was an atmosphere of social merriment, every nook and corner presented a colourful sight. Young and old alike were covered with colours. People came from small groups to sing and dance to big family groups to throw colours on each other. There were different food stalls of Indian delicacies and food for children such as pizza, popcorn, ice-creams. Children also enjoyed various activities like face-painting.
Ms Madan, also one of the participants who attended the Holi came with her infant to celebrate the festival of colours. She tells Life&Style that she witnessed people coming together from across all ages and walks of life. She came in white but left as a peacock. “My brother tagged along with me and helped to babysit my seven-month-old baby. My friend and I were greeted with colours the moment we set foot on the grounds. From blues to yellows, I was soaked with every colour you can name. Despite religion or creed, everyone was welcome. It was my first time experiencing this and I must say it is something that I am looking forward to next year. The vibe, music, people, festival and everything in it was just an experience on its own,” Ms Madan shares.
It was the fourth edition of ColourFest and from the first one held to the very recent one, the crowd has been growing bigger and diverse. This is simply attributed to the strong Tanzanian Culture as well – Tanzanians are warm, jovial and peaceful people. To make merry and celebrate in groups is something that is seen across not just Hindus but other sects as well.
“A Tanzanian can be a Hindu, Muslim or Christian – yet one is seen celebrating Diwali, Idd, Easter and Christmas. Along similar lines, Holi can be celebrated by one and all. A testament of this is easily seen from the growing popularity and attendance, from a few hundred to now thousands,” coins one of the organisers.

Over the last couple of years, more and more travelers are picking out adventure tourism , a trend that has completely changed the face of traditional travel and hospitality norms in India and abroad, and one that is only expected to grow further in the coming years.
New -age travellers are seeking excitement over run-of-the-mill touristy experiences , which might explain the boom in adventure activities like paragliding, trekking, Zipline, Skycycle, Burma bridge, Banchak Tripolin, paintballing etc. Hospitality giants are also creating curated farm-to-fork experiences , cooking with chefs and wellness activities like yoga and customised spa treatments to woo guests who are looking for something extra and unique while travelling.
Southern Charm
A recent report reveals that Andhra Pradesh tourism marked a new high with a 130 per cent growth in the adventure tourism economy. The report mentions that adventure sports in Krishna and Godavari rivers are drawing a large number of tourists to the state, while the popularity of long excursions has also gone up.
Sandeep Reddy, GM at Andhra Art Craft Hotel explains, “ Tourism has changed from a mere flight, food and room service to a multi-sensory experience. About thirty years ago, we saw the advent of boutique hotels — a creation of Ian Schrager, who is considered as the founder of boutique hotels. A decade later came the art hotels. The first art hotel to come up in India was Le Sutra in Mumbai, where 120 designers, sculptors and artists came together. Inspired by that, we conceptualised the world ’s first art and craft hotel in Visakhapatnam, created exclusively by artisans from Andhra Pradesh. The hotel showcases the essence of the state while promoting local culture.”
He adds, “Guests visiting Vizag usually request to visit places like Araku, short trips to art/craft villages like Etikoppaka and time their travel around skating and marathon events.”
With the growth in disposable income, people are taking more vacations, exploring newer destinations and even returning to their favorite destinations to explore further.
Manu Rishi Guptha, CEO, Niraamaya Retreats in Kerala, points out that most guests come looking for bespoke experiences such as yoga, cooking classes with the chef, village life excursions, pottery classes, visit to a local fish market etc.
“The most popular requests which we get are for yoga, cooking classes, renewal of vows and backwater boat ride dinners. They start from as low as Rs 1,500 per person to upwards of Rs 1 lakh for rare experiences ,” says Guptha.
Uphill Adventures
With people wanting to have new experiences , there also appears to be a shift towards getting more out of a holiday . “A number of activities such as adventure rope course, mountain biking, rock climbing and rappelling, orienteering etc is part of the itinerary at most of our locations and all of them are guided by certified instructors. We also have paintball, car racing, sports and games at all our properties,” informs Harish Sharma, GM at Aamod Resorts, adding, “We recently set up a space observatory in association with Stargate Observatory at our Alwar and Kausani locations, where guests can not only gaze at stars endlessly but also participate in scheduled “ star parties” with experts to witness meteor showers and space events.”
Planned itineraries are the future for leisure destinations, with a bespoke itinerary now covered in tailor-made individual stays. Shiv Kr. Mehan, COO at Leisure Hotels Group, says, “ Adventure tourism is an exchange with the local culture and landscape interspersed with nature activities . While many properties offer archery, meditation, croquet and water sports, wildlife safaris, mountain drives, treks into the wilderness to experience pristine natural spots such as lakes or waterfalls, water rafting, climbing and biking are some of the other activities . Activities are nominally priced and could range from Rs 2,000 to 10,000.”
Digvijay Singh, owner of Ashdale boutique hotel in Nainital, narrates the history of the summer home of the royal family of Sahaspur Bilar, which was renovated in 2018 into a boutique hotel with all modern amenities. “Since Ashdale is nestled between the Ayar and Cheena hills on either side, there are picturesque treks around this property. We have partnered with Wildrift Adventures to provide experiences such as guided cycling trails, camel back treks, Cheena Peak trek with an altitude of 8,579 ft. One of the most memorable curated experiences is yacht racing at the famous lake in Nainital,” he explains.
Wellness and Healing
Adventure is not just restricted to trying extreme sports, it also involves exploring their inner power and healing with nature. No wonder that a huge segment of Indian tourism now focuses on wellness and treatment-based experiential activities .
Geeta Ramesh, Joint MD at Kairali Ayurvedic Group informs, “ Activities like yoga, cooking demos and garden/walk experience are included in almost all of our packages whereas trips for local sightseeing, shopping experiences , tours to the Silent Valley National Park, reservoir dam, and wildlife sanctuary can be arranged for `3,000 to 4,000 on request.”
The current trend in travel is about experiences that allow a guest to rediscover their true self, remarks Manoj Khetan, co-founder of Naad Wellness . “Guests come looking for life-altering healing experiences . Some of the outdoor activities which help in bringing balance to the mind, body , and spirit are aerial yoga and walk on a pebbled reflexology track. During the stay, we also include consultation with our resident doctors, treatments and wellness cuisine as part of our healing series,” says Khetan.

Royal Rendezvous
While living in a historical home or experiencing a royal lifestyle in a heritage property is one of the most sought after experiences , tourists are now willing to shell out extra sums of money to blend luxury with adventure activities in historical hotels too.
Binny Sebastian, GM at Alila Fort Bishangarh, says guests look out for a quality travel experience, and adds, “We encourage guests to discover the city and experience the local life, culture, and craft traditions of Bishangarh — a day at the dairy will take you on the journey of milk from farm to fridge and the warrior’s horse can make you relive the royal days of the Shekhawati dynasty. The most popular requests at the fort however, are to experience the chef’s MasterClass, the organic garden experience and a rural tour, which can cost between `1,000 to 40,000, depending on the experience.”
Surprisingly, adventure tourism is not just restricted to youngsters but travelers who are in their 40s or 50s too, mentions Sanjeev K Nayar, GM of WelcomHeritage Group. He informs, “Right from a village tour on a tractor to kite flying, outdoor barbeque, turban tying, royal horse buggy ride, sand dune drives and nature walks – depending on the location, we provide these activities for the guests. We have Kasmanda Palace, one of the oldest buildings of Mussoorie built in 1836 which is now a heritage property. Similarly, at Judge’s Court in Pragpur which is located in India’s first heritage village, one can stay at the 300- year -old ancestral cottage in the medieval hamlet.”
Hassle-free holidays
Apart from outdoor adventures, exclusive luxury and niche experiences form a part of this segment too. Suman Gahlot, GM of Aloft New Delhi Aerocity, reveals, “Guests look for offbeat experiences and I do see a significant rise of planned itineraries right now and in the coming years. From artistic gourmet to introduction to master artworks and sculptures — we provide activities where guests can learn about heirloom to handicrafts, vintage cars to Venetian art, artwork to antiques and enjoy a huge amount of personal collection at our artistic lounge by Conferro Heritae.”
Significantly, the exponential growth in the adventure tourism sector has led to an increase in online bookings, and a large number of travelers prefer booking experiential travel without any hassle. Heena J Akhtar, co-Founder of e-commerce travel portal Tripxoxo, mentions, “The most popular activities trending currently are acrobatic paragliding, Zorbing, rainforest ziplining, valley crossing, mountain trekking, bungee jumping, kayaking and cycling — ranging from `1,000 to 3 lakh per activity. A lot of people prefer going to unexplored places such as river rafting in Kolad, scuba diving and snorkelling at Tarkarli, three-lake trek in Manali, banana boat ride in Goa, bike tours in Spiti valley, kayaking at Kalote lake and Harihareshwar Beach holiday . Helicopter rides, yacht sailing, private scuba dives, snorkeling and snow leopard expeditions are some of the more unique options.”
Akhtar adds, “Some of the most expensive adventure activities are balloon flights with breakfast and the falcon show which is around Rs 3,07,760, while the Abu Dhabi Formula1 goes for Rs 82,990 and sky diving is Rs 47,250.”

Rikkyo University (Toshima Ward) The First Dining Hall, also designated as a historical building in Tokyo, has a retro taste. The “Katsu-don” which Nagao Shigeo also ate is still popular. Nowadays, there are more recent menus items like “Loco Moco-don”.

Kokugakuin University (Shibuya Ward) There are three school meals in the school building that has been rebuilt for image renewal. Recommended is the noodle menu. You can enjoy authentic taste such as “Oroshi Bukkake” made from Sanuki Udon, which is made out of ingredients from Kagawa Prefecture.

Kokushikan University (Setagaya Ward) The Sky Lounge on the Setagaya Campus was designed and directed by Hirosai Yamamoto. Since you can also drink at night, there is an assortment of unbeatable bar-style menu items, such as the popular Korean-style okonomiyaki.

University of Tokyo (Meguro Ward) Goro visited Hongo campus, but I would recommend “Lever son Verre” on Komaba Campus. Enjoy authentic French cuisine in a luxurious atmosphere that does not seem like a school meal. “Daily lunch” is 800 yen.

Tokyo University of Agriculture (Setagaya Ward) Befitting the University of Agriculture, selling safe and secure food made with rice and vegetables that were made by themselves. Healthy menu items such as “niku toro don” are available. It is said that neighbors often come here to eat freely.

Taisho University (Toshima Ward) At the Shinodai Dining Hall run by the Prince Hotel, curry costs 800 yen, which is expensive for a school meal, but if you consider the hotel-level taste, it is a good deal. Among the classic school lunches, the hearty “T-Lunch” is popular.

建て替えを行いイメージを一新した校舎には、3つの学食が。お勧めは麺メニュー。香川県から材料を取り寄せた讃岐うどんで作る「おろしぶっかけ」など本場の味が楽しめる。

世田谷キャンパスのスカイラウンジは山本寛斎氏がデザイン監修。夜は飲酒もできるため、人気の「韓国風お好み焼き」をはじめ、つまみ系メニューが居酒屋顔負けの品揃えになっている
