There’s better Japanese, Chinese, Vietnamese, north/south indian and such food than you’ll find in any other state.
Then there’s middle eastern and north African cuisine, which like we have authentic places to eat at.
That leaves like Italian, which I’ll grant you other places have better pizza, though the pasta scene in SF is decent. And other European styles, which I don’t care about but sure we aren’t special at.
There’s also only like 1 decent barbecue place. But saying we don’t have good barbecue and pizza food is very different than saying we don’t have good food.

Well, you can straight up tell by the food content for many of these. Pakistan is predominantly Muslim, so their diet is more likely to contain beef (nihari, chapli kabob, and so on). Nepal is heavily influenced by Chinese cuisine, so there are, as you mentioned, more stir fries and noodle dishes, as well as fewer dishes that feature warm (cinnamon, cardamom, allspice, etc.) spices.
Traditional Guatemalan tamales are VERY different from traditional Mexican tamales. They’re usually stubbier, wrapped in banana leaves as opposed to corn husks, much more likely to contain tomato, and the masa used is far blander and has less sugar content. They’re also usually quite moist and have very little structural integrity; I suspect the banana leaves trap moisture without absorbing nearly as much as corn husks do.
